District president, Mrs. Roylance Westcott, commented on the theme "Perfection is oat ex- pected but improvement is". Guest speaker, Mrs. J. Harvey Houston, Lucknow, provincial public relations of- ficer, spoke on the duties of public relations officers at all levels. Several hand made quilts were on display and Mrs. Bruce Shapton, Exeter commented on the history and art of quilt making. Mrs. Ray Rader gave the highlights of the FWIO Officers Conference held May 4, 5, 6 at the University of Waterloo. A total of $106 was raised for the Institute project Pennies for Friendship. Jane Pengilley home economist gave a report of 4-H clubs and workshops in the county. She presented ideas and ways to publicize the Institute movement. The last meeting of the season for Xi Gamma Nu chapter of Beta Sigma Phi was held at the 'l'uckey cottage in Southcott Pines. A buffet dinner was served by members of the losing side of an attendance competition, New members from Alpha Pi chapter joining Xi Gamma Nu, Dorothy Balsdon, Verla Russell, Mary Ellison, Diane Jeffery and Nancy Wright were welcomed by president Elsie Tuckey. A pin signifying 25 years of active participation in Beta Sigma Phi was awarded to June Essery, Mrs. Essery joined theSorortiy in Pontiac,Michigan, received the Order of the Rose in 1967 and held the office of treasurer when Xi Gamma Nu was formed in 1970. During her years in Sorority she has held every office and par- ticipated on all committees. It was reported by the dance committee that the Annual Sorority Ball held at the Kirkton Community Centre was ex- tremely successful, The Blood Donor Clinic held at the high school and organized by the Sorority had a very good response, Thanks to all those donors who made their con- tribution toward the success of the clinic. Pat Fletcher presented outgoing president Elsie Tuckey with a pin in the form of a gavel. Insallation of the executive for the 1976-77 season was per- formed. The officers are: president, Pat Fletcher vice- president, Donna Jones, recor- ., ding-secretary, Heather Higgins, corresponding secretary, Eileen Ross and treasurer, Mary Jane Taylor, Four members who will be attending the Beta Sigma Phi convention held at Trent University near Peterborough are Elsie Tuckey, Elaine Bogart, Mary Jane Taylor and Louise Giffin. Sorority holds Kirkton dance Xi Gamma Nu and Alpha Pi members of Beta Sigma Phi and friends danced to the music of Larry Dennis and the New Society at their Spring Formal on May 15 at the Kirkton-Woodham Hall. Alpha Pi members of Beta Sigma Phi enjoyed a Pot Luck supper at the home of Glenda Wagner. Roll Call was answered by thanking secret sisters. Carol Bishop and Dorcas Wein were in charge of the program, "Hope and our Heritage." Mrs. Joyce Monteith was guest speaker. Her topic was "Antiques and their Functions." Lunch was served, Mrs. Jim Anderson and daughters of London spent the holiday weekend with her mother Mrs. Irene Harness, Tomatoes for a classy salad Another classic, Nicoise Salad (pronounced nee-swa), can be a combination of many ingredients including potatoes, onions, eggs, tuna and anchovies. But, for it to be a true Nicoise, it must have tomatoes. This recipe is a light, mild-flavored version of the famous classic, which makes it suitable as a first course as well as for a complete luncheon meal. To give it a bit more "punch", sprinkle a few anchovy fillets over the tops or add a few black or green olives. To make it more substantial, toss in a can of drained tuna. To add to its attractiveness and flavor, increase the number of tomatoes. And whatever you do, never eliminate tomatoes from this salad, because it then is no longer a Nicoise. With Ontario greenhouse tomatoes in good supply right now, give it a try. Nicoise Salad 1 garlic clove, cut in half 2 cups romain lettuce, in bite-size pieces 2 cups iceberg lettuce, in bite-size pieces 2 cups spinach, in bite-size pieces 3 Ontario Greenhouse tomatoes, cut into sixths 1 cup cooked diced Ontario potato 2 hard cooked eggs, quartered 2 thin slices of Spanish onion, separated into rings green pepper, cut into strips cup grated Parmesan cheese Dressing '1 4 cup olive oil 2 tbsp red wine vinegar 2 tbsp lemon juice 1 2 tsp dry mustard tsp salt Freshly ground black pepper Rub the inside of a wooden salad bowl with a garlic clove. Make a bed of the greens in the bowl. Arrange next five ingredients on top. Sprinkle with cheese. Combine dressing ingredients in a jar with a tight fitting lid. Shake well. Two pounds of carrots in one delicious recipe Reasonably priced and packed in 2-pound poly bags, Ontario carrots have got to be one of the best food bargains around. Buy a bag and use them all up at once. That way there won't be any carrots left in your refrigerator for you to forget about and eventually to go soft and wobbly! Here's a new way to serve them — spiced with garlic and chili powder. This recipe, turns carrots into something special; it is even guaranteed to convert a few carrot-dislikers into carrot- likers ! The combination of carrots and ketchup may not sound too likely to you, but it does absolutely great things in this recipe. Spanish Carrots 1 1 cup butter, melted 2 garlic cloves, minced 2 lb carrots, cut in thin diagonal slices '2 cup water 1 tsp salt 1 green pepper, cut in thin strips 1.4 cup ketchup 1 1 tsp chili powder Add garlic and carrots to hot butter in skillet. Add water and cover. Cook over high heat, stirring occasionally until carrots begin to get tender — about 6 minutes. Sprinkle in salt. Add green pepper. Cover again, Cook 2 minutes, stirring once or twice, Turn off heat. Stir in ketchup and chili powder. Serve immediately. Makes 6 servings.
