Weather cooperating, fresh Ontario asparagus usually ap- pears around the second week of May and disappears around the middle of June. Eat your fill while its here and freeze some for more good eating during the winter months. For freezing, select young, tender stalks with compact tips, Wash the asparagus spears thoroughly in cold water. If there is sand under the leaflets, soak and wash in warm water or remove the leaflets. Break or cut off the butt ends, Sort the spears into equal sizes - small (up to '4-inch diameter), medium (1 4 tO 1 2-inch), and large (over 1 2 inch). Blanch by dunking the spears in boiling water. After the water returns to a boil, which should not take more than one minute, begin timing. Blanch small stalks for 2 minutes, medium for 3 minutes and large for 4 minutes. Quickly remove the spears from the boiling water and immerse in ice cold water. Cool quickly, dry and package in freezer bags or containers. The butt ends which were broken or cut from the stalks can also be blanched and frozen to be used for soup, Ontario Asparagus springing up Fresh asparagus is springing up right now from the fertile soils of southwestern Ontario. It's the perfect time to try this asparagus recipe. These asparagus crepes can be prepared in advance, refrigerated, and baked just before serving - an easy way to serve a special dish the next time you have guests. Asparagus Crepes with Mornay Sauce 48 small asparagus spears 12 5-inch crepes, flavored with lemon rind 11 2 cups Mornay sauce Clean asparagus. Trim stalks to 5 inches long. Cook in enough boiling salted water to cover until just tender (6 to 8 minutes). Drain, Place 4 asparagus spears on the middle of each crepe. Top with 1 to 2 spoonfuls Mornay sauce. Fold envelope style and place seam-side up on a buttered baking dish. Pour remainder of sauce over filled crepes.Bake 400 degrees F for 15 minutes, Broil lightly. (May be made ahead and refrigerated until baked.) Makes 6 servings. Mornay Sauce 2 tbsp butter 2 tbsp all-purpose flour tsp salt dash pepper 1 cup milk 1 egg yolk 2 tbsp cream 2 tbsp Parmesan cheese, grated 2 tbsp Gruyere cheese, grated Melt butter in saucepan. Quickly stir in flour, salt and pepper. Bubble mixture over medium heat for 1 minute. Remove from heat and add milk gradually. Cook, stirring con- stantly until thickened. Blend egg yolk and cream. Add a small amount of the cream sauce. Return mixture to rest of sauce. Cook until well blended and heated through. Stir in grated cheeses. Church women meet Units 1 and 2 of Exeter United Church Women held their May meeting Thursday afternoon with Mrs. V. Jeffery in charge. The theme of the meeting was "Mothers." Mrs. A. Steeper read two poems on The Miracle of May and Housecleaning the cupboards in your heart. Mrs. L. Finitbeiner favoured with a piano solo "Tell Mother I'll be there." Mrs. E. McRoberts spoke on Mothers of the Bible and our responsibility as United Church Women of Exeter. She stated that behind all great men of the Bible was a Godly mother. She referred to Hannah, Moses' mother, Naomi, Elizabeth the mother of John, and Mary, the supreme choice of mother, chosen to be the mother of God's son. Mary was patient, kind, loving and taught Jesus daily of God's love. A mother is a child's first teacher and it is important that she teach him right from wrong. Women were prominent in the early church and laboured much in the Lord. We in the U.C.W. are their successors. By our Christian Life we translate the Bible into a language a child can understand. We are the only Bible many will read. Are we relating and translating His message? We must tell His .message ourselves as well as sending out others, The meeting closed with prayer and a social hour followed. Eastern Star has meeting Over 200 members of the Order of the Eastern Star attended the May meeting of Exeter chapter 222, held at SHDHS. St. Mary s and Parkhill Chapters were co-hosts to honour sister Betty Yull, Worthy Grand Matron, Brother Hector Little, Worthy Grand Patron and other Grand officers of the Grand chapter of Ontario OES, Mrs. Velma Huff, Worthy Matron, St. Marys chapter and Mrs. Jeanie Lee, Worthy Matron, Parkhill Chapter, had a part in the meeting, conducted by Exeter's Worthy Matron, Mrs. Bernice Boyle. Each Worthy Matron on behalf of her respective chapter presented a donation to the Worthy Grand Matron's special Benevolent project, "The Shriners Children's Hospital Toronto." "credit and You — Women's Access to Credit in Ontario," is the name of a new booklet released today by the Ministry of Consumer and Commercial Relations. According to Consumer Minister Sidney Handleman, the purpose of the publication is "to make women aware of their right to equal access to credit, to in- crease their knowledge of credit matters and to help them obtain and use credit wisely." The ministry has negotiated a set of guidelines with the credit granting industry pertaining to women who apply for credit. "The focal point of these guidelines," the minister said, "is that women and men, regardless of whether they are single, married, separated or divorced, are to he judged by the same standards in determining credit worthiness." Uncer the heading, "If You Are Discriminated Against", the booklet advises: "If you are. denied credit and believe you have been discriminated against because of your sex or marital status, ask to see the senior credit officer of the agency involved. "Be prepared to assert your claim and to back it with facts. If your request for credit is still refused and you are not given a satisfactory explanation, contact the Women's Advisor of the Ministry of Consumer and Commercial Relations." WILLIAM MUNN Mary Marlene Connelly, daughter of Mrs. John Connelly and the late John Connelly of Goderich and William Wayne Munn, son of Mr. and Mrs. Alex Munn of Hensall were united in marriage April 24 by Rev. R. Moynahan at St. Peter's Roman Catholic Church in Goderich, which was decorated in yellow daisies. The bride was attended by Mrs. Collen McKinlay, Matron of Honor, from Huron Park, and attendants Mrs. Janice Trim, Kitchener, Sandra Munn, Hensall, and Denise Connel- ly, Goderich. Best Man was Robert Ferrigon, Hoboken. New Jersey, and ushers John Taylor and Larry Consitt, both of Hensall. The couple left for Niagara Falls following the wedding and will reside at RR 2, Hensall.
