Area cooks provide recipes for , peaches, cabbages
Grind the green tomatoes with
the coarse blade of a food
chopper, Stir in the salt. Let stand
30 minutes. Drain in a colander
for several hours or overnight.
With peaches being fairly
plentiful on the market at the
moment a recipe for freezer
peach pie filling from Mrs. Art
Hodgins of Clandeboye appears
to be very timely,
Freezing peaches for pies this
way saves freezer space as they
can be stacked or stored on their
sides.
Freezer Peach Pie
Filling
Blanch and slice 21/2 cups peaches
Add 3/4 cup white sugar
1 level tablespoon corn starch
1 level tablespoon Minute
Tapioca
A few shakes of nutmeg (or)
1/4 teaspoon almond extract
Stir together in a bowl and
place in a 9 inch plate lined with
foil. Cover with another piece of
foil, Prepare and freeze as
quickly as possible so the peaches
do not discolour. When frozen
solid, slip out of pie plate and
place in plastic bag in freezer.
When cooking at a later date
the foil will peel off easily and
place in a single or double crust
pastry. Bake at 450 degrees on
bottom rack of oven for 20
minutes, then lower heat to 350
degrees for another 30-35 minutes
until cooked,
