BRIAN FINKBEINER Church was decorated with candelabra and pastel flower arrangements for the August 7 wedding of Georgina Obre and Brian Finkbeiner. Mr. and Mrs. Stan Obre, RR 3, Exeter are parents of the bride and the groom is the son of Mrs. Marguerite Finkbeiner, RR 1, Crediton. Rev. Harold Snell officiated. The matron of honour was Leona McIntosh, Mount Carmel and the bridesmaids were Fiona Kennedy, Exeter; Judy Miller, Dashwood and Susan Thompson, Exeter. Rhonda Vandeworp, Kitchener, was the flower girl and the ring bearer was Jeremy Finkbeiner, Crediton. The best man, was Reiny Freiter, Woodstock and guests were ushered by Bill Dietrich, Waterloo; Morley Obre, Exeter and Darrell Finkbeiner, Crediton. The couple have taken up reesidence in Huron Park. Let stand 30 minutes. Drain in a colander for several hours or overnight. With peaches being fairly plentiful on the market at the moment a recipe for freezer peach pie filling from Mrs. Art Hodgins of Clandeboye appears to be very timely, Freezing peaches for pies this way saves freezer space as they can be stacked or stored on their sides. Freezer Peach Pie Filling Blanch and slice 21/2 cups peaches Add 3/4 cup white sugar 1 level tablespoon corn starch 1 level tablespoon Minute Tapioca A few shakes of nutmeg (or) 1/4 teaspoon almond extract Stir together in a bowl and place in a 9 inch plate lined with foil. Cover with another piece of foil, Prepare and freeze as quickly as possible so the peaches do not discolour. When frozen solid, slip out of pie plate and place in plastic bag in freezer. When cooking at a later date the foil will peel off easily and place in a single or double crust pastry. Bake at 450 degrees on bottom rack of oven for 20 minutes, then lower heat to 350 degrees for another 30-35 minutes until cooked, Stuffed Cabbage Rolls With many gardens in the area about ready to produce fresh cabbages, Mrs. Denise Bilcke, RR 3, Exeter, passes on her favorite recipe for cabbage rolls. 1 large head green cabbage fallout 31/a lb) 1 lb ground beef chuck 1/2 lb ground pork 1 cup cooked rice 1/4 cup grated onion 2 tablespoons chopped parsley 1 egg 1/4 cup milk 1 teaspoon salt 1/4 teaspoon pepper 1/2 teaspoon allspice SAKE 2 caps (8-oz. size) tomato sauce with tomato pieces 1 large onion, sliced 2 tablespoons brown sugar 3 whole cloves 1 bay leaf 1 teaspoon salt 1/8 teaspoon pepper 1. In large kettle, bring 3 quarts' water to boiling. Add cabbage; simmer 2 to 3 minutes, or until leaves are pliable. Remove cabbage; drain. 2. Carefully remove 16 large leaves from cabbage; trim center rib, If leaves are not soft enough to roll, return to boiling water for a minute. 3, In large bowl, combine beef, pork, rice, grated onion, the parsley, egg, milk, 1 teaspoon salt, 1/4 teaspoon pepper, and the allspice. Mix with a fork until well blended. 4, Place 1/4 cup meat mixture in hollow of each of the 16 cabbage leaves. Fold sides of leaf over stuffing; roll up from thick end of the leaf. 5. Make Sauce: In large, heavy skillet, combine tomato sauce, sliced onion, brown sugar, cloves, bay leaf, salt, and pepper; mix 6. Arrange rolls, seam side down, in a single layer in sauce. Bring sauce to boiling over Medium heat; reduce heat; cover; simmer 11/2 hours. Makes 6 to 8 servings.
