A LOVELY CHRISTMAS CAKE — The seniorswho reside at the new Helen Jermyn senior citizen apartments decided to put on their own pre-Christmas dinner last Saturday prior to going home with families and relatives for the Christmas season. To make the occasion really something special, a special cake was baked with the inscription, "God ENNIMAMMESONSFP' .:.?-veggwammur Bless You". Hayter's Turkeys Thanks for your patronage Gwyn's Cookery Corner It's the season for 'Snicky- Snackies', and I for one am always on the lookout for something new, interesting and tasty, These are three recipes gleaned from a new cook which don't sound too difficult and which I intend to try over the holidays. May you would, too. Individual Shrimp Quiches Yield: 2 to 3 dozen,dependingjon size of pans 1/2 cup soft butter 4 ounces cream cheese 2 tablespoons heavy cream 11/4 cups flour 1/2 teaspoon salt 11/2 to 2 cupstoughlycut, canned deveined shrimp 11/2 cups heavy cream 3 eggs, lightly beaten 1/4 cup finely grated Gru34t.e or Swiss' cheese Salt and black pepper to taste 1 teaspoon ,snipped fresh dill 1/3 cup freshly grated Parmesan cheese 1. Cream butter and cream cheese very well. Beat in 2 tablespoons cream and then work in flour and salt to make dough. Wrap in wax paper and refrigbrate several hours or overnight. (Note: If you don't want to go to the bother of this, use your own pastry). 2.Preheatioven to 425 degrees. 3. Roll out pastry to 1/8-inch thickness and cut into rounds to fit very small, one-bite-size, muffin tins. Fit rounds into tins. 4. Distribute shrimp in pastry cases, Combine cream, eggs, Gruyere, salt, pepper and dill. Spoon mixture over shrimp. 5. Sprinkle tops of tarts with Parmesan and bake 5 minutes. Reduce oven tempei•ature to 350 degrees and bake 15 minutes longer, or until quiches are set and lightly browned on top. Serve immediately. 6. If making ahead of time, cool on rack. Chill. Pack in boxes lined with foil or aluminum dishes; cover with foil, freeze. Remove from freezer about 1/2 hour before serving. 7. Preheat oven to 375 degrees. Place quiches on a baking sheet and bake 15 to 20 minutes or until heated through. Miniature Drumsticks Yield: 18 servings 3 pounds broiler-fryer chicken wings (about 18) 1/2 cup flour ,1/2 cup freshly grated Parmesan cheese 1 teaspoon salt 1 teaspoon paprika ',/2 teaspoon oregano 1/4 teaspoon Tabasco sauce 3/4 cup buttermilk Oil for deep-frying Cut the wings in half and use the "drumstick" half for frying. Blend 'flour, salt, cheese, paprika and oregano. Add Tabasco to buttermilk. Dip chicken "drumsticks" in buttermilk; shake to remove excess. Roll in dry ingredients. Cook chicken pieces about 5 minutes in deep oil heated to 365 degrees, Tuna-Stuffed Eggs Yield: 12 servings 12 hard-cooked eggs 1 can (7 ounces) solid white tuna 1/2 cup mayonnaise 1/4 teaspoon salt 1/2 teaspoon black pepper 2 tablespoons Madeira or cognac 1/B teaspoon thyme 1/3 cup chopped pecans 1 tablespoon chopped parsley Pimento cutouts Capers Halve eggs lengthwise; scoop yolks into a bowl and mash. Add remaining ingredients except pimento and capers to yolks and mix well. Fill egg whites with mixture. Garnish with pimento and capers. Chill, Christmas Special . . .
