Orange blossom sauce (2 ceps)
e cup hotter or margarine
1 tablespoon flour
1 cup water
'a cup brown sugar
12 cup maple-flavored syrup
Juice and grated rind of 1 orange
Juice of 1 lemon.
Melt butter and stir in flour;
cook, stirring constantly until
mixture thickens. Add water,
sugar, syrup and fruit juices,
Cook until mixture comes to a
boil; add grated orange rind.
Serve hot.

you're in the pancake baking
business.
With your friend's help, you
can keep hot pancakes sliding
from pan to mouth for eight
People, with ease. (If you tend to
fluster easily, warm your oven ,
make a few ahead of time, and
place them on a warmed
platter.)
Where you eat these feathery-
light morsels doesn't matter. but
do serve them attractively. Set
out an assortment of syrups and
toppings, some of which can be
purchased ready-made. Maple
syrup and butter are
mouthwatering accom-
paniments, but do try a couple of
those that are given below:
Basic Pancakes
(Serves 4-6)
1 c. ail-purpose flour
1 level tablespoon baking powder
1.2 teaspoon salt
1'.a tablespoons sugar
1 egg, beaten lightly
1 cup milk
2 tablespoons melted shortening
Combine flour, baking powder,
salt and sugar. Beat egg until it is
light, stir in milk and shortening.
Quickly pour into dry ingredients
and mix together.
Heat pan to 380 degrees. Drop
pancake batter, about 2
tablespoons at a time, into hot
greased pan. Bake until bubbles
form over the top, turn and bake
second side.
Honey butter (1 cup)
lie cup butter
1,2 cup honey
Let butter stand at room
temperature until softened.
Gradually add an equal amount
of honey, beating well as honey is
added.
To make Honey Orange Butter,
add one teaspoon of orange juice
to Honey Butter, or enough to
make it of desired consistency
and flavour.
Banana waffle or
Pancake sauce
2 ripe bananas
1 tablespoon lemon juice
1 to 2 teaspoons vanilla
1/4 cup heavy cream
Confectioners' sugar
Crush' the, bananas -and, put
them through a sieve; add lemon
juice and mix thoroughly, then
add the cream and beat hard.
When well blended, add confec-
tioners' sugar slowly until sauce
is the consistency of thick cream.
Last, add the vanilla and beat
hard again.
Berry sauce (2 cups)
2 cups crushed berries
1 cup sugar
1 tablespoon lemon juice
1 teaspoon butter or margarine
Cook the crushed berries,
sugar and lemon juice for four
minutes. Remove from the heat
and add the butter.

slipped away with unbelievable
speed. I press the little green
autograph book to my warm
cheek, trying hard to swallow
clown an uncomfortable lump in
my throat. I can't resist the urge
to peek before I drop the book
back into its place. The verse I
see sends my heart lurching like
crazy! Who could have penned
these romantic words? I can
barely stand the suspense . , .
Our eyes have met,
our lips not yet.
But wait, old girl,
I'll get you yet.
Oh darn, wouldn't you know it?

Whether caused by war or by
the nation's economy, times of
disaster are always made more
bearable by the miraculous and
healing power of humour.
The 'Dirty Thirties' brought
the Depression, with its
degrading hunger and heartbreak
to thousands of people. History
books record what took place
during those agonizing years ;mo-
tion picture film documents
events authentically for posteri-
ty. Parents and grandparents try
to convey to. the youth of today
how the lack of life's necessities
during those lean years made or
broke the spirit.
Why do we turn a deaf ear so
often to stories of someone else's
suffering? Are we embarrassed?
Is it lack of comprehension, or is
it just plain indifference on our
part?
The drabness of the depression
years was colored by the
amusing situations and whims of
the children. A pathetic little
note of nostalgia from the 1930's
fell into my hands recently. A
box of letters and memorabilia
stored away for years, yielded a
delightful, faded and dog-eared
autograph book, completed in my
childhood.
Turning the ink-spattered
pages brought memories in great
warm waves over me, and tears
blinded my eyes. Each name
inscribed there conjured before
me the writer's young face. Over
the years, since leaving school,
I'd heard that Jane was nursing
in a hospital at Pearl Harbour
when the. Japanese attacked;
that Tom became a wealthy
business executive, but died of a
heart attack; Susan married and
has six or seven children; Jack

The St. Patrick's Catholic
Women's League had a great
response to their bazaar held last
week when approximately $800
was netted. There was
everything available for the ear-
ly Christmas shopper and items
from a country store : such as
homemade dry goods, and a
-penny sale.
Draws were made with the
following winners: pole lamp,
Mrs. Jack Sprout; transistor
radio, Mrs. R. Anderson; money
doll, Mrs. A. Menders, London;
and sewing basket, Mrs. Joan
Kelly, Granton.
,went to reform school for his
part in the theft of a car; Betty is
a librarian, forever married to
her books; and my best friend
then, Audrey, is my closest
friend today. How wonderful it
would be to hang around the old
schoolyard again, waiting for the
nine o'clock bell; calling and
scrambling to the other kids to
get in line before the monitor
reported us!
Joe, of the oily skin and the
chronic sniff, could never unders-
tand why I didn't want to walk
with him. Though he lacked
physical charm he made up for
that in his power to prophesy the
future. Look what he wrote in my
autograph book:
First comes love, then
comes marriage,
Then comes Mary with
a baby carriage.
How's that for forecasting a
girl's future? He was 'dead• on'
three times.
There are those people who
could say that I didn't take this
girl's advice:
When you are married,
and live upstairs,
For goodness sakes,
don't put on airs,
Collecting ,autographS had its
start in ancient times. Writings
baked on clay tablets have been
carefully preserved. In medieval
times friends or prominent peo-
ple inscribed cordial messages in
a notebook similar to the
autograph books we use today.
The word autograph is of Greek
origin and is a term applied to
what is written with the person's
own hand. The value of an
autograph is determined by the
interest felt in the writer, the
scarcity of such relics of him,
and the contents of the writing.
The signature of a famous per-
son, alone, usually hasn't the
value of a letter plus a signature.
Historians and biographers
have used many of these valuable
autographs for educational pur-
poses, Mine are valuable, to me
because of the happy memories
they recall.
