They've got
a mountain
You've probably heard about
the Big Rock Candy Mountain but
have you ever seen a Mountain, of
Spuds?
It's a common sight these days
out on the Soudant farms in the
Zurich area where Theodore
Soudant. and his sons Hank,
Frank and Gus are harvesting
around 80,000 bushels of potatoes
from 200 acres, along with 24
acres of onions.
The potatoes, grown on two
farms , one on marsh land and
one on sandy soil . „ are har-
vested and brought to the large,
modern plant on highway S4 east
of Zurieh. Here, with the use of
the most up-to-day equipment the
tubers are graded and packaged
to be shipped out by truck to
wholesalers in Kitchener and
London.
When the operation is in full tilt
it takes eight people to handle it
and even the wives are involved.
A visit to the plant these fall
days will probably find Frank
shovelling potatoes from the
mountain behind him unto a
conveyor belt.
As the belt moves along you
may see his wife and Mrs. Gus
Soudant starting to grade the
vegetables by picking out the
bruised or damaged ones. The
good potatoes continue over a

cording to size to where Gus picks
out the oversize ones for a
separate pile. From here they
move to the weighing and
packaging machine. Finally they
are stored to await delivery to the
city markets.
Has it been a good year for
spuds? According to Gus Soudant
it has, "We've have a very good
crop off the marsh land," he
says, "and with irrigation the
crop from the sandy area is
pretty good, too."

Farms expect to harvest over 80,000 bushels of potatoes this season.
