Shown above digging in the sand for any living creatures are Bradley Hayes, Allan McRobert, Michael Neil, Cynthia Bakker, Barbara Jones and Lori Noyes, T-A photo Perk up winter meals with variety of pickle recipies Elementary classes lower More secondary pupils School Enrolment Reflects Trend, Board Extend Busing At its regular meeting this week, the Middlesex county Board of Education learned that enrolment trends in county schools were similar to those in other areas, A report showed a decline of 279 pupils, or 2.9 per cent, in 32 elementary schools, while the county's five secondary schools registered an increase of 307 students, or 8,1 percent, over last ' year. Director of Education, J.A. Gummow, said` that enrolment figures would likely change upward over the next few weeks when some students returned late from summer employment, In other business, the board agreed to provide, on a one-year trial basis, transportation for public school students living beyond one mile from school in urban areas such as Strathroy, Glencoe, and Parkhill. A survey, carried out in response to parents' request for bus service, revealed that 283 students will be involved. Cost of the service will be approximately $28.60 per day for the board. The board approved the pur- chase of $12,351 worth of in- struments for the new music program at Strathroy District Collegiate Institute. There are 74 students registered for in- strumental music. Temporary facilities will be used in a por- table classroom until a small addition to the school is com- pleted with a music and theatre arts room. Finally, the board allocated approximately $10,000 in each of the 1973 and 1974 budgets to assist in developing a basic film library service. These little dill chips solve the problem, Sweet dill chips 6 large dill pickles 2 cups vinegar 6 cups sugar 6 whole cloves 2 bay leaves Cut pickles crosswise in thin slices; soak in cold water overnight. In the morning, boil remaining ingredients together 10 minutes, and pour over drained pickles. Let stand 24 hours, then drain off syrup, boil another 10 minutes, and pour over pickles. These can be put into jars or kept in a crock; it is not necessary to seal them. They can be used right away, but will improve with age. Brialin's Johanna won 1st Open female, and on to winners female, and best of Opposite sex, for another 3 points for her championship. As Zandi has won his championship, he will be retired for this year. Both dogs were handled by Scott McNair, Ilderton, By Sid Da ley On Sunday, September 10 it was my pleasure to journey to Dresden to attend the Zone A-3 Drumhead Service and the Dedication of the Dresden and Area 'Memorial Field of Remembrance at the Dresden Cemetery Our Comrades of the Dresden area are to be congratulated for the fine work they have done to perpetuate the memory and deeds of their fallen - each one of whom now have a little piece of Canada, the country for which they laid down their life, dedicated to their name forever. To start the ceremony a huge parade made up of Comrades from throughout District A, numerous color parties, sea cadets, cubs, dignitaries from Ontario Command accompanied by two bands marched to the cemetery where literally hun- dreds of civilians awaited our arrival and commencement of the dedication. Comrades, they even had a firing party from Branch 18 Wallaceburg fire a volley. The Memorial Field of Remembrance is situated at the entrance of the regular cemetery, the focal point being a large granite cenotaph flanked by two flag poles and backed by a crescent shaped bank of grass; leading to the cenotaph is a wide cement sidewalk on either side of which are head stones, such as you would find in a cemetery overseas one for each of the Comrades who gave his life in the cause of freedom. A note of interest is the fact the Dresden Branch padre Rev. Dr. Charles H. Maclean, a distinguished veteran in his own right, recently answered a call to Nova Scotia but returned to Dresden to perform the Act of Dedication. Occupants of the second car, Mr. & Mrs. Paul Hoff, Mitchell and their son Stephen, 23 months, are listed in satisfactory condition in Seaforth Community Hospital. The bright blue skies, dotted with large white clouds, (except for Western Fair week), bring back memories of starting-back-to- school-time. The nights, just beginning to flirt with Jack Frost, recall corn, wiener roasts and the laughing and singing and full tummies only the young can endure. Wood smoke and the pungent odor of burning leaves may send your senses reeling but give me the spicy, zesty fragrance of a bubbling kettle of chili sauce every time! Relishes and pickles made from summer's harvest, will perk up your meals all winter long. Here are a few tips it's wise to follow when making pickles. — Iodized salt darkens pickles. Use pure, granulated salt. — Use the vinegar specified in the reeipe. If brine is too weak, pickles will be soft. — Fill jars to within 1,2 " of top of jar.. SUE EDGINTON CLANDEBOYE Mr, & Mrs, Ken Carter enjoyed; their flight, accompanied by Mr. & Mrs. Cyril Lee of London, to the British Isles. They visited with friends at Kirkcaldy after reaching Prestwick, Scotland. From here they had a five day tour to The Highlands where they saw many old castles which were homes of Royalty in years past. They had a distant view, of Balmoral castle, the summer home of the Queen; visited Crathie Church which the Royal Family attend when in Scotland, and shopped in Balletar where the Royal Family do their buying. Many beautiful gardens of flowers could be seen. The Highlands to the far north are almost desolate, narrow winding roads and only purple heather on the mountains. Then in some areas they saw flocks of sheep of various colors and breeds and Highland cattle which are very shaggy. A tour of Edinburgh included Edinburgh Castle, St. Giles Cathedral, which is very ancient and beautiful and Holyrood, the palace of the ancient kings and queens, Queen Elizabeth also spent a short time here. The Princess Street Gardens are included in this tour which extend many blocks of the city and are considered one of the finest in the world. While visiting London, England they toured West- minster Abbey and Buckingham Palace. After a three hour boat trip to Larne, Ireland from Stranraer they saw blocked streets, barbed wire in front of buildings and some of the destruction of the Irish uprising as it is only 25 miles from Belfast. You'll enjoy these easy-to- make pickles, Prize bread-and-butter pickles 1 gallon medium-sized cucum- bers thinly sliced 8 large onions, thinly sliced 1 2 cup coarse salt 2 green peppers, cut in narrow strips Mix the above ingredients and let stand 3 hours. Drain. Combine in a large kettle: 5 cups sugar 11 2 teaspoon powdered tumeric 1 2 teaspoon ground cloves 2 tablespoons white mustard seed 1 teaspoon celery seed 5 cups cider vinegar Heat mixture scalding hot, stirring to dissolve sugar. Add drained vegetables and heat just to boiling. Seal at once in sterilized jars. Makes 12 pints. + + + United Worship service was led by the ,Rev. W.C. Tupling. Marlene Butler sang a solo and Mr. Thornton's message was on works being the proof of true faith. In the evening service, the girl's quartet sang Amazing Grace. Rick Thornton led the singing. Mr. Thornton's message was on the theme, If God be for us, who can be against us? Wednesday night, the church gathered for a short devotional service, then all went down to the lower auditorium for a fellowship service, and presention of gifts to Roger Mason and Bill Cochrane, both of whom are going to Bible School at Toronto. They received each sheets, blanket? and pillowcases to use there, along with personal items for their apartment at the Bible school. A lunch was served and preparations made by Ruth Frost, Carol Mason, and Marie Cochrane. Friday night, the young people gave another shower for Robert Holland, who is going to the U. of Waterloo giving him about the same things that the other young men received, The lunch was provided by the ,young people, and some adults; 1 thin slice lemon '2 teaspoon salt Distilled white vinegar Drain mushrooms and save the liquor, Put mushrooms and all remaining ingredients except vinegar in a sterilized jar, arranging garlic, pepper, etc. between the layers of mushrooms, Measure mushroom liquor and add an equal amount of vinegar; bring to a boil and pour at once over mushrooms in the jar; seal. Jane Hodgson, daughter of Mr. & Mrs. Murray Hodgson received a $50 grant from Middlesex County, given to a student of Centralia College of Agricultural Technology for 1972. Jane will be taking her second termbeginning September 18. Use any or all of the following spices: I.k teaspoon cloves 1/4 teaspoon cinnamon 1/8 teaspoon allspice 1 4 teaspoon nutmeg Peel tomatoes and onion. Remove seeds from peppers, Chop all ingredients finely Simmer slowly, stirring often, until mixture thickens. This will take 1-11/2 hours. Makes about 21/2 cups chili sauce. Fill small clean jars to the top and seal. Keeps a long time in the refrigerator.
