In egg business for 50 years
Fifty years and some 48 million
eggs later Vernon Schatz is still
in the general store inisiness in
Dashwood and eggs continue to
be part of his life,
Schatz is the only independent
egg grader and the only outlet
where a small farmer can sell
eggs between Lake Huron and
Toronto.
Now well known in the general
store business with the emphasis
on men's suits, dry goods and
woolen materials he started
working for Reid, Edighoffer and
Son on November 21, 1921.
Less than two years later he
moved into the building he now
occupies on the northwest corner
of Dashwood's main intersection
and worked for Ezra Tiernan and
Son.
in the early days one of his
first chores was counting eggs.'
Grading was unheard of in the
early 1920's and most farmers
brought their eggs to the store
packed in oats in pails or buckets.
Also as an apprentice mer-
chant, it was the newcomer's
chore to look after the horse and
buggies of customers, In a lot of
instances, the women would
come to town by buggy and the
apprentices would hitch the
horses to the posts provided in
front of most stores or take them
to a nearby shed becauseof a lack
of space.
Grading of eggs under
supervision of the provincial
government came into being in
1925. The Dashwood egg grader
says he has received all kinds of

eggs brown and white, dirty and
clean including rotten ones.
Many years ago, most hens quit
laying in the fall and most far•
mers would pack eggs in water-
glass for preservation until
spring.
When spring came and the hens
started producing again, fresh
eggs would be eaten and the
storage ones would be taken to
the store, creating a few rotten
varieties,
Currently, Schatz handles
somewhere in the neighbourhood
of 30 crates of eggs per week,
Starting back in 1921 when he
first handled eggs, mostly on a
counting basis, the Dashwood
grader estimates he had graded
some 3,900,000 dozens of eggs.
Projecting this to actual eggs,
the amount would rise to more
than 46 million eggs. Taking into
consideration on many occasions
he also packed the eggs away
after candling, the number of
eggs actually handled could
become astronomical,
Due to governmental pressure,
the first egg grading plant
located in a warehouse at the
back of the store had to be moved
to the basement and eventually to
a new building adjacent to the
store in 1944.
Most of the grading of eggs
throughout the years was done in
the evenings. Early grading was
done with the help of a small hand
scales with each egg being
weighed individually.
In the 20's and 30's farmers and
their wives brought many
varieties of produce to the store
to trade for merchandise.
Farmers received one cent per
dozen more for eggs that were
traded for dry goods, groceries,
etc,
In addition to eggs, merchants
accepted butter in rolls, dried
apples, hams, side bacon,
potatoes, dutch set onions and
live and dressed poultry.
Many customers bought flour
for their own bread baking at the
local general store and Schatz
says it was quite common for a
large family to ordera ton of flour
at one time,
In 1941 he bought the present
business from the late Addison
Tiernan. The store has been
remodelled on two occasions, in
1943 and 1963.
The Dashwood store is one of
the few remaining that handle
coal oil.
During the summer months
many visitors from south of the
border drop in to what they call a
meeOtypical Canadian general
store', especially to purchase
woolens.
The Shatz store carries a
tremendous stock. His motto is
"You cannot sell from an empty
wagon, people today will not wait
until tomorrow.
When he started in the general
store business in 1921, Schatz
received $8 per week. He says $5
went for board.
