Countless versions of old-English trifle must exist, but one of the
best is this rich apricot version. Collectors of antique glass, might just
serve it in one of their prized compotes or pressed glass bowls, but
actually any pretty crystal dish will do. And although it can be very
showily assembled, the simple basics are custard sauce, tinned apricots,
whipped cream and lady fingers. If you'd like to add a gourmet touch,
sprinkle the lady fingers with a little sherry before adding the sauce.

Dental Association during the
23rd observance of Dental Health
Week, February 7 - 13, 1971.
We hope you'll be able to
"answer; "I keep it healthy and
glowing with regular visits to my
family dentist".
Did you know too, that the
greatest cause of tooth loss in this
country is caused not by cavities
but by gum disease? Or that
dentists can treat these diseases as
easily as your physician treats
many other illnesses?
Has anyone told you that if'
your child's tooth is knocked out
there's a good chance you may be
able to save it if you take the child
and the tooth to his dentist at
' once.
Here's what to do:
Immediately wrap the tooth in a
damp cloth; don't remove any of
the debris or tissue on the tooth
and get going to your dentist's
office. Often he can re-insert the
tooth in its socket and splint it in
place. After several weeks the
splint is removed and the tooth
usually is firmly rooted.
Are you aware that most
dentists don't smoke? Or that
two out of three who did, have
quit? Your family dentist joined
the battle against smoking years
ago when it was learned that
smokers run four times the risk of
developing oral cancer than
non-smokers.
He'll be the first to warn you
against changing from cigarettes
to pipes or cigars. That just
battle torn areas.

vanilla and almond extract; strain
into a bowl, Cool completely.
Line bottom of a 11/2-quart glass
bowl with a layer of lady fingers;
cover with a layer of apricots.
Repeat layering until all the lady
fingers and apricots have been
used. Pour custard over all. Chill.
Beat whipping cream until softly
stiff; beat in the 2 tablespoons
sugar. Spoon over trifle; sprinkle
with almonds and decorate, if
desired, with maraschino
cherries.
Apricot Trifle
(Makes 8 Servings)
3 cups milk
4 eggs
1/2 cup sugar
1/8 teaspoon salt
1 tsp, vanilla
ih tsp. almond extract
12 lady fingers, split
1 (19-ounce) can apricot
halves, well-drained
1/g pint (11/4 cups) whipping
cream
2 tablespoons sugar
'A cup toasted slivered almonds
maraschino cherries (optional)
Scald milk in top of double
boiler. Beat eggs slightly; beat in
the 1/2 cup sugar and salt. Stir a
little of the scalded milk into
eggs; return to double boiler and
cook over simmering water,
stirring constantly, until custard
will coat a metal spoon. Stir in

Thousands of children in
far-off battle torn Viet Nam are
today wearing knitted, garments
and sleeping under knitted cot
blankets from the hands of
Ontario girls and women.
Ontario concerned girls and
women in more than seventy
communities are actively
involved. More than fifty rural
communities are participating in
the program which is run by the
Ohtario Voice of Women as a
special project in cooperation
with the Vancouver based
Canadian Aid for Vietnam
Civilians.
To date, more than 14,000
garments and knitted cot
.blankets have been forwarded by
the Ontario girls and women,
Mrs. Lillian Greene of Toronto,
convener for the V.O.W.
Knitting Project says.
"Our knitters come .from just
about every walk of life", she
said. "They are from church
groups, Brownies, Girl Guides,
trade union auxiliaries, high
schools, homes for the aged,
housewives, grandmothers,
students . . . you name it; there
are upwards of 2,000 of them in
Ontario and in age they are from
nine to ninety-five. They just
keep knitting and knitting. . .to
do what they can to keep those
babies and children warm."
All the goods are shipped at
. no cost via Soviet ships to
Vladivistok from where they are

Monday afternoon's dance
was held as usual, although the
stormy weather and shortage of
staff cut down the attendance.
The Huronview orchestra
provided the music for a half
hour of dancing with the rest of
the afternoon's entertainment
was an old fashioned sing song.
Prize winners at the
progressive euchre held in the
auditorium Wednesday
afternoon were: ladies high, Miss
Cassie Dougal; men's high Dan
McKinnon; consolation prizes,
Mrs. Wagner and Miller Adams.
The staff were assisted by
Mrs. Bagley and Mrs. Ramsay,
volunteer helpers from Adastral
Park.
Owing to the ice storm
Thursday (family night) the
program by Jim Lawrie of Blyth
and his groupwas rescheduled for
February 11.
Last Thursday evening, Mr.
Percy Brown showed slides
taken in wartime and during his
recent trip to England and
Scotland.
The residents enjoyed the
pictures and a vote of thanks
was extended to Percy on behalf
of the residents by Sarah Carter.

It is a sad commentary on our
times that while modern dental
care has found ways to prevent
almost all dental disease, still it is
increasing. Why? Almost
everyone today is familiar with
the basic principles of sound
dental health. Children are taught
to brush their teeth after every
meal, or at least to "swish and
swallow". People know that sugar
forms acids which attack tooth
enamel, and that flubridation of
the water supply will help cut
down on cavities. Yet dental
disease marches unchecked
throughout the nation.
The plain truth is that dentists
can preach about the need for
regular check-ups and good oral
hygiene endlessly, but unless
people begin listening to what he
is saying, and acting on his advice,
they will continue to lose teeth.
It is up to every adult
individual to accept
responsibility for his own dental
health. If you are a parent you •
should be taking your child to his
own family dentist every six
months.
If you haven't been too
conscientious about good dental
health, the Ontario Dental
Association hopes that the
message of Dental Health Week
will have enough impact on you
to make you pick up that phone
and book an appointment with
the dentist of your choice soon.
Why not resolve right now to
have every member of your
family begin regular visits to the
family dentist.
You'll find life is healthier -
and more enjoyable.
