They combine an age old symbol of hospitality with bright new flavor combinations you'll find a joy to concoct. Whipped cream gives these party drinks that traditionally smooth, delicate texture; you add different flavor combinations depending on the age group and the occasion. It all adds up to happy guests and a carefree hostess. For the youngsters or teenagers choose Santa's Orange Eggnog. Vanilla pudding mix and plenty of milk make a quick base for this first version; frozen orange juice, eggs and softly whipped cream add party glamor. Be sure to allow for extra servings! SANTA'S ORANGE EGGNOG (Makes 14 to 16 Servings) 1 (31/4 ounce) package vanilla pudding and pie filling mix 1 cup sugar 2 quarts milk 4 eggs, separated 1/2 cup frozen concentrated orange juice, thawed 1 teaspoon orange rind 1/2 pint (11/4 cups) whipping cream Combine pudding mix, sugar and 1 cup of the milk in a large heavy saucepan. Beat egg yolks until light; gradually add remaining milk and stir into pudding mixture. Cook over medium heat, stirring constantly until mixture comes to a full boil. Reduce heat and cook 1 minute longer. Remove from heat and stir in orange juice and 1/2 teaspoon of the orange rind. Chill. Beat egg whites until stiff but not dry. Whip cream until softly stiff. Gently fold egg whites and whipped cream into pudding mixture. Sprinkle with the remaining 1/2 teaspoon orange rind. Chill thoroughly. * * * Adult merrymakers will gather 'round the punch bowl that's filled with Christmas Coffee Nog .. . and who could blame them! This time the creamy drink is subtly flavored with a blend of coffee and rum and sports scoops of ice cream afloat the fluffy topping. Prepare the eggnog, if you like, before the party begins. At serving time simply pour into a chilled punch bowl and add the scoops of ice cream. CHRISTMAS COFFEE NOG (Makes 10 to 12 Servings) 5 cups cold milk 3 tablespoons instant coffee ecgtigsp sugar 1/4 cup dark rum 1ipint WA cups) whipping cream 1 pint vanilla ice cream Heat 1 cup of the milk and stir in instant coffee. Chill. Beat eggs until thick and lemon colored; gradually beat in sugar. Stir in coffee mixture, rum and the remaining 4 cups milk. Whip cream until softly stiff and fold into milk mixture. Spoon ice cream on top of mixture. Serve immediately. Note; More ice cream may be spooned on top if eggnog stands for any length of time. * Frosted grapes make attractive garnishes for the turkey platter or cake plate, says the Poultry Products Institute of Canada, especially if different coloured sugars are used. Place 1/2 cup or more of sugar in each of two glass jars. Add a drop of green food colour to one and red to the other. Replace covers on jars and shake each jar in turn until the sugar is an even colour. If too dark, add more sugar; if too light, add more food colouring. Beat one egg white until frothy. Dip some small bunches of washed green grapes in red sugar and some in white. Place on waxed paper to dry. Repeat with green and white sugar and red or black grapes. Attractive, effective and edible. But remember, the egg white must be frothy to stick to grapes and hold sugar. * * Do not stuff a turkey then refrigerate it and roast the next day, says the Poultry Products Institute of Canada. It takes too long for the dressing to cool down to the point where any spoilage organisms present become inactive; and when plac.ed in the oven later it takes too long for the dressing to heat to the point where sterilization takes place. Without a meat thermometer to check, the centre of the dressing may never even reach 165 degrees F., the recommended temperature. At this temperature the turkey will also be cooked. Christmas is a Happy Time "And when they were come into the house, they saw the young Child with Mary His mother, and fell down, and worshipped Him; and when they had opened their treasures, they presented unto him gifts, gold, and frankincense, and myrrh." As on the night when the Wise Men found the place where He was, may the story of the first Christmas bring to us wonder and joy ever new. And may His message, heard again in song and story, give to all of us the great gifts of spiritual joy, eternal hope and promise. Christmas Pageant EXETER UNITED CHURCH. Sunday, Dec. 21 . 7:30 P.M.
