APPLE DESSERT DUMPLINGS 'A cup corn syrup 1/2 cup water 1 tablespoon lemon juice • 1/3 cup firmly packed light brown sugar 1 tablespoon corn starch 1/2 to 1 teaspoon cinnamon 1/4 teaspoon salt 11/4 pounds cooking apples, pared and sliced (3 cups) 1h cup raisins (optional) o • 2 tablespoons butter 1 recipe Dessert Dumplings Combine syrup, water, lemon juice, brown sugar, corn starch, cinnamon and salt in saucepan. Cook over medium heat, stirring constantly, until mixture comes • to boil, Add apples. Cover and simmer 10 minutes. Add raisins and butter, Turn into greased 8-inch square baking dish. Drop dumpling mixture by tablespoonfuls onto fruit.. Bake in a 400 degree F. oven. 20 minutes. Sprinkle dumplings with cinnamon sugar or chopped nuts, if desired. Serve warm with whipped cream. Makes 4 to 6 servings. DESSERT DUMPLINGS 1 cup sifted flour 2 teaspoorts baking powder 2 teaspoons sugar 1/4 teaspoon salt 1/4 teaspoon nutmeg 1/4 cup corn oil 1/3 cup milk 1 egg ift flour, baking powder, sugar, salt and nutmeg together into mixing bowl. Blend corn oil, milk and egg. Stir into dry ingredients, mixing just until flour mixture is moistened. Drop onto fruit, and bake as directed above. APPLE PIZZA Pastry for single crust pie 1 (4-ounce) package cream cheese, softened 1 teaspoon lemon juice 1 large or 2 medium red apple(s) Lemon juice NO halves, for garnish 3/4 cup corn syrup 3/4 cup apricot jam 1% teaspoons lemon juice Line 1 (12 inch) pizza pan With pastry. Flute edge. Prick pastry well. Bake in 450 degree F. oven until golden brown, 12 to 15 minutes. Cool. Blend cream cheese and 1 teaspoon lemon juice. Spread over cool pastry. Slice apple(s) very thinly and coat each slice with lemon juice. Arrange slices on cream cheese mixture. Garnish with nut halves. Combine corn syrup, apricot jam and 11/2 teaspoons lemon juice in 11/2 quart saucepan. Bring to full boil over high heat, then boil hard 2 minutes, stirring constantly. Remove from heat. Pour over apple slices. Chill. Makes 8 servings. Strawberry Pizza: Follow recipe for Apple Pizza, substituting 1 pint fresh strawberries for apple, and strawberry jam for apricot. Peach Pizza: Follow recipe for Apple Pizza, substituting 1 teaspoon peach syrup for lemon juice, 1 (28-ounce) can sliced peaches (drained and cut into 1/4 inch slices) for apple, and peach jam for apricot. Here's a hamburg supper dish that's just a bit different. A cheese bread tops a chili con came base to make a chili short cake. This recipe can be made in less than half an hour, and the cost is low, CHILI SHORT CAKE 1 pound hamburg 1 small onion, chopped garlic (optional) chili powder as desired 3A teaspoon salt 1 20-ounce can tomatoes 1 15-ounce can kidney beans 1/4 cup catsup cheese biscuit topping sprinkling basil Brown onion and hamburg together in heavy skillet until pinkness disappears. Pour off any fat and add remaining ingredients. Simmer while the cheese biscuit topping is being prepared, 'then pour into a 11/2-quart casserole. Spoon cheese biscuit topping over the mixture, and bake at 400 degrees F for 25 minutes. To serve, invert mixture on a hot platter. This serves six people generously. CHEESE BISCUIT TOPPING Add 3/4 cup grated cheddar cheese and 1 teaspoon caraway seed to 11/2 cups biscuit mix. Stir in a mixture of 3/4 cup milk and 1 well-beaten egg. With Labor Day coining up this weekend, there may be some readers who will be taking off with the camper trailer for one more weekend before the fall activities start. For you, I have dug out the next couple of recipes. If you prefer a hot meal it is simple to have two or three recipes which require one burner only. One of these is Onion and Beef Medley. This can be made in a frying pan in about 20 minutes if you brought minced beef in your cooler. There is a generous quantity of onions in this recipe, but where will they smell better than cooking on a camp stove! They could be sliced at home and packed in a covered container or wrapped in aluminum foil. A can of mixed vegetables together with seasonings complete the savory dish. If the outdoor appetites have been really sharpened, a tin of spaghetti with tomato sauce will stretch this meal. To finish up that carton of eggs, why not scramble them in the frying pan together with cream-style corn for another easy main dish. Cubes of process cheese added at the last will contribute extra "staying power." Scrubbed carrot sticks or other raw vegetables will make a crunchy complement. HEARTY PICNIC SALAD 1 can (19-ounce) baked beans 1 tablespoon finely chopped onion 2 tablespoons vinegar V2 teaspoon prepared mustard 2 tablespoons chopped sweet pickle 6 wieners (about V2 pound), cooked and sliced 3 cups finely shredded cabbage Combine all ingredients except wieners and cabbage. Chill ingredients in separate containers. Just before serving, add wieners and cabbage and toss lightly. 6 servings. ONION AND BEEF MEDLEY 4 cups sliced onions 3 tablespoons butter 11/2 pounds minced beef 1 can (10-Ounce) condensed mushroom soup 1/2 teaspoon marjoram 1 teaspoon salt 1/8 teaspoon pepper 1 can (14-ounce) mixed vegetables Saute onions in melted butter until transparent, about 5 minutes. Add beef and brown. Stir in soup arid seasonings. Add the juice from the -tan of vegetables. Cook slowly, stirring occasionally, Until juice has evaporated and meat Cooked.
