"South Huron Hospital has

"This gift has been donated
Annually to South Huron
Hospital, to be used for needy
new born babies, and for several
years, Mr. and Mrs. Wilfred
Reeves, former residents of
Exeter and active members of

this much appreciated donation

made their annual visit and
brought their very welcome gift.

Has the high price of beef just
about got you down?
If your family likes fish you
may be interested in some
interesting fish recipes I
scrounged out of the mail this
morning.
I must be truthful. I haven't
tried any of them, but they
sound pretty good to me and
they might to you, too.
All call for halibut, one of the
least expensive fish you can buy.
Good tasting too, I think.
I'm sure You can substitute
any of your favorite kinds of
fish in these recipes, with
perhaps some minor
adjustments.
HALIBUT STEAKS AMANDINE
4 Halibut steaks
cut about 1" thick
1/3 cup butter or margarine
1/2 cup (generous) slivered almonds
Salt and pepper
Juice of 1 lemon
Melt butter or margarine in large
frying pan. Add slivered almonds
and cook until just golden.
Remove almonds from pan
leaving butter or margarine. Add
Halibut steaks and cook about
5-6 minutes on one side — turn
and cook until done, about 5-6
minutes more. Remove to
heated serving platter. Sprinkle
lightly with salt and pepper.
Return almonds to pan, add
lemon juice to remaining butter
or margarine, reheat and pour
over fish. Serve with lemon
wedges and parsley or
watercress. Makes 4 servings.
HALIBUT FISH 'N CHIPS
2 lbs. Halibut fillets
1 cup pancake mix
1/2 teaspoon mace
1/8 teaspoon pepper
1 cup milk
1 medium egg, slightly beaten
Cooking oil
Rinse fillets and pat dry with
paper toweling. Blend pancake
mix, mace, and pepper. Mix milk
and egg. Add pancake mixture
and stir until blended but still
lumpy. Dip fillets in the mixture
and then deep-fry in hot cooking
oil at 375 degrees for 7-10
minutes, depending on thickness
of the fillets. Serve with French
fried potatoes. Makes 6 servings.
MUSHROOM
HALIBUT STEAKS
2 lbs. Halibut steaks
Salt
Monosodium glutamate
1 can (20 oz.) or 2 cans (10 oz.
each) cream of mushroom sour
1/2 cup crushed sesame crackers
or wheat thins
2 tablespoons melted butter
Place Halibut steaks in a shallow,
buttered baking dish and season
with salt and monosodium
glutamate. Pour soup over. Mix
crumbs with melted butter and
sprinkle on top. Bake at 450
degrees for 20 minutes. Makes 6
servings.
For the Appetizer Tray
HALIBUT TID-BITS
1 lb. Halibut steaks
Or fillets cut 1" thick
1/2 cup prepared pancake mix
1/3 cup beer
Cooking oil
Cut Halibut into one-inch cubes
(or slightly smaller). Coat well
with batter made by mixing '
cup prepared pancake mix with
113 cup beer. Deep fry at 375
degrees until golden brown (2 to.
3 minutes.). Or, heat oil in
frypan to 375 degrees; depth
should be about 3.:1-inch. Turn
pieces so they brown evenly.
Drain on absorbent paper. Serve
on toothpicks. Accompany with
tartar sauce — or other favorite
dipping sauce. Makes 30.40
ti -bits.
