for the bus trip to Detroit .June
18. Those members not planning
to make the trip to Detroit will
enjoy dinner in London the
same evening.
A birthday party invitation to
Ooderich was received.
The annual picnic will be held
at the home of Mrs. Marg Wragg
July 9.
The mystery prize was won
by Mae Brintnell.

IRWIN'S LADIES' WEAR & DRY GOODS
HENSALL
1 tbsp,. chopped onion
IA cup coarsely chopped almonds
1 tbsp, butter
1/2 cup rice (uncooked)
1/2 cup grated cheddar cheese
11/2 tsp, salt
11/2 cups liquid (hot water and
mushroom liquid)
brain mushrooms, saving the
liquid. Brown mushrooms,
onions and almonds lightly in
butter, Add rice and cheese, and
mix thoroughly, Place mixture
in greased casserole.
Combine mushroom liquid
and hot water to make 11/2 cups.
Add salt. Pour over rice mixture,
Cover, Bake at 375 degrees F for
45 to 60 minutes until rice is
done. Serves four to six.
PORK CHOPS
A L'ORANGE
4 loin pork chops
salt, pepper, paprika
3 tablespoons water
1/4 cup white sugar
11/2 teaspoons cornstarch
dash salt
1/4 teaspoon cinnamon
10 whole cloves
2 teaspoons grated orange rind
1/2 cup orange juice
4 orange slices, halved
Sprinkle chops with salt,
pepper, paprika. Peary to a rich
golden brown on each side. Turn
heat to low, add water, and
cover skillet tightly. Simmer 45
minutes to one hour, or until the
chops are tender.
About 20 minutes before the
chops are done, make the orange
glaze.

In saucepan cook sugar,
cornstarch, salt, cinnamon,

The youngsters from Grades
P 2 and 3 of Exeter Public School
and Precious Blood Separate
School who toured South Huron
Hospital last Tuesday afternoon
were quiet and well-behaved
according to members of the
Hospital Auxiliary who
sponsored the affair.
The outing was a
first-time-ever venture arranged
by the public relations
committee of the Auxiliary.
Beverage and cookies at the end
of the tour were actually
secondary as the children
thoroughly enjoyed every
• moment of their visit to the
hospital , . and were
disappointed when it ended.
In the hospital basement, the
children saw the central supply
depot where the hospital staff
picks up all the instruments and
accessories necessary to their
• work.
The kids were shown how to
test rubber gloves for leaks, in
one instance. Little eyes almost
popped out as the staff turned
the gloves inside out without the
least bit of trouble,
In the classroom where the
• RNA students spend a large
portion of their time in the early
weeks of training, the school
students met and "felt" Percy
the Skeleton and Priscilla the
dummy patient.
Probably the most interesting
stop upstairs was in the
• operating room where the most
popular questions concerned the
sutures and the huge light over
the operating table.
The girls especially
appreciated the glimpse they got
of the newborn babies, and that
particular day at least two of the
• babies were very new.
I think the event was
worthwhile. If the impressions
left on young minds are
important, some great things
were accomplished.
I hope the outing will be
repeated next year.

After that frost on the
weekend it is hard to say just
how many strawberries will
survive. I know the plants in the
Keller garden were just nicely
out in blossom when the frost
hit, and from the looks of
• things, there may not be many
left untouched.
Still I would imagine there
will be some strawberries to be
had. The more scarce they are,
the more delicious they will be.
That's why I have chosen to give
you some new strawberry
• recipes for your files. I hope you
will find them helpful.
STRAWBERRY SURPRISE
CAKE
1 pint box strawberries
2 to 3 tablespoons sugar
1 angel food cake (8-inch
• diameter)
1/2 pint whipping cream whipped
Few drops red food coloring
(optional)
Wash and hull strawberries.
Reserve 6 to 8 whole berries to
garnish. Slice remainder and
sprinkle with sugar.
• Cut a 1/2-inch slice off top of
cake and set aside. With a sharp
pointed knife hollow out central
portion of cake to form a
"shell", leaving 3/4-inch cake
around all edges. Break portion
of cake removed from centre in
bite sized pieces. Fold sweetened
• strawberries and cake pieces into
3/4 cup of the whipped cream.
Fill hollow in cake with
strawberry mixture and replace
top slice.
Tint remaining whipped
cream a delicate pink if desired
and spread over cake. Garnish
• with whole strawberries and chill
until ready to serve. 6 servings. *
STRAWBERRY CREAM
CHEESE PIE
8 ounces cream cheese
3 tablespoons sugar
1/4 cup cream
1 teaspoon grated lemon rind
2 teaspoons lemon juice
1 baked pie shell (9-inch)
4 cups washed, hulled
strawberries (1 quart box)
4 teaspoons cornstarch
1/2 cup sugar
Few grains salt
• 1/4 cup water
2 teaspoons lemon juice
Soften cream cheese at room
temperature. Gradually beat in
the 3 tablespoons sugar, then the
cream, lemon rind and juice.
Spread mixture in baked pie
shell and chill.

Crush 1 cup of the berries,
bring to a boil and press through
sieve. Mix cornstarch, remaining
1/2 cup sugar and salt, Gradually
add water and sieved juice, Bring
to boil and cook, stifling
constantly until thickened and
clear. Cool and add lemon juice.
Arrange remaining strawberries
in chilled pie and coat with
glaze. Chill until ready to serve.
6 servings,
NOTE: If desired, a vanilla
pudding mix may be used in
place of cream cheese mixture.

GLAZED STRAWBERRY
SQUARES
Butterscotch Base
lh cup butter
1/3 cup firmlypackedbrownsugar
1 cup sifted all-purpose flour
Cream butter and sugar. Stir
in flour. Pat mixture on bottom
of 8-inch square pan. Bake at
350 degrees F. until lightly
browned, about 15 minutes.
Filling and Glaze
4 cups washed, hulled
strawberries (1 quart box)
4 teaspoons cornstarch
1/2 cup sugar
Dash salt
1/4 cup water
2 teaspoons lemon juice
1 or 2 drops red food coloring
Y2 pint sweetened, whipped
cream
Crush 1 cup of the berries,
bring to a boil and press through
sieve. Mix cornstarch, sugar and
salt. Gradually add water and
sieved juice. Bring to boil and •
cook, stirring constantly until
thickened and clear, about 3
minutes. Cool, add lemon juice
and tint with food coloring.
Arrange remaining strawberries
on cooled base and coat with
glaze. Chill. Cut in squares and
top with sweetened whipped
cream. 6 to 8 servings.
There may still be rhubarb
around the country-side and you
may appreciate a new and novel
way to serve it. Graham flour
pastry may make the difference.
Here's how to do it.
GRAHAM FLOUR PASTRY
1 cup graham flour
1 cup pastry flour
1/2 tsp, salt
1 tbsp. sugar
2/3 cup shortening
5 tbsp, water
, Mix flours and sugar. Add salt
and shortening. Add water, and
finish as you would your regular
pastry.
RHUBARB CUSTARD PIE
1 egg, beaten
3/4 cup white sugar
1/8 teaspoon salt
1 tsp. grated lemon rind
1 tbsp. cornstarch
3 cups diced rhubarb
Mix all ingredients well, and
pour into unbaked pie crust.
Cover with a criss-cross lattice of
pastry strips. Bake in a hot oven
(450 degrees) for 15 minutes.
Reduce heat to 350 degrees
and continue baking for 30
minutes more, or until rhubarb
is tender. Delicious served with
cream or ice cream.

this week for a few recipes
which don't really suit any
special occasion but sound
terribly good to me.
Just for your information,
many of the recipes printed
through this column are from
the home economists at
Macdonald Institute, University
of Guelph. All recipes are tried
and proven so I never hesitate to
pass them along.
BUTTERSCOTCH
REFRIGERATOR
COOKIES
1 cup melted butter
2 cups brown sugar
2 eggs
1 teaspoon vanilla
3/4 cup maraschino cherries,
chopped
3A cup chopped walnuts
31/2 cups flour
1 teaspoon baking soda
% teaspoon salt
Melt butter. Beat eggs and
gradually add sugar and melted
butter. Add vanilla. Sift in flour,
baking soda, and salt. Add
cherries and nuts. Shape into
rolls and refrigerate overnight.
Slice thinly with a sharp knife
and bake at 350 degrees F for
approximately 10 minutes or
until golden brown, *
