Basically, fruits and certain vegetables and their juices are used to add Vitamin C to our diets. Since we are paying for Vitamin C content, we might as well know where to find the most Vitamin C for the least amount of money. Presently, frozen concentrates to which water is added seem to be the best buy. The flavor is excellent, natural Vitamin C content is high and price is comparable when everything is considered. Speaking of the most food value for the dollar, pound for pound eggs are a bargain nutritionally and price-wise as compared to other protein foods. Although eggs are purchased by the dozen, they are sold by the pound. One dozen extra large eggs should weigh 27 ozs.; large, 24 ozs.; medium, 21 ozs.; small, 18 ozs.; and peewee, under 18 ozs. By the way, if you pay more for one color egg than another, you are just paying for personal prejudice concerning something which eventually goes out with the garbage. The color of the shell has no bearing on the quality, flavor or "cookability" of the egg inside. Although the dairy farmers throughout the area may not entirely approve, I know that many homemakers are easing the strain on the family budget by using skim milk powder in their cooking. I have high hopes to dig up some recipes using this product. In fact, if any of you readers have such information, won't you please send it along to share with other ladies? In the meantime, I came across this recipe for cocoa using skim milk powder. It may be just the answer to that problem of serving something hot, delicious, nutritious and inexpensive when your youngsters unexpectedly lead in a pack of chilled friends after a skating party or a sleigh ride. Or, how about egg nog — hot or cold. COCOA 3 to 4 tablespoons cocoa 31/2 to 41/2 tablespoons sugar 1/8 teaspoon salt i/2 cup water 4 cups cold water 1 1/3 to 2 cups skimmilk powder 'A teaspoon vanilla In top of double boiler, combine cocoa, sugar, salt and the 1/2 cup water. Bring to a boil over direct heat, then simmer 2 minutes, stirring to prevent sticking. Add remaining water. Stir in skim milk powder, cover, place over hot water and heat. When hot, add vanilla. To prevent a scum forming, beat with rotary beater until a froth forms. Makes about 41/4 cups. EGG NOG 1 cup skim milk powder 2 cups cold water 3 eggs 1 tablespoon sugar Few grains salt 1 teaspoon vanilla Few grains nutmeg Combine skint milk powder and vvater. Heat until steaming, Beat eggs, sugar and salt slightly. Gradually stir hot milk into egg mixture, Add vanilla. Do not heat further. Strain arid serve in mugs. Sprinkle lightly with nutmeg. makes about 23A cups. Thursday from South Huron Ho.spital, Exeter.
