for the most vitamin C possible
in citrus fruits and juices because
that's what they are paying for.
If you are buying a turkey
this weekend for Christmas next
week you may come to grips
with the problem of whether to
buy a fresh frozen or fresh
unfrozen bird for your table.
In actual fact there is little
nutritive difference in the two
providing the fresh frozen bird
has been process-Pd carefully and
reaches the consumer without
too much delay.
A fresh unfrozen turkey or a
fresh frozen bird which has been
thawed should be rinsed under
cold running water, wiped inside
and out with a clean damp cloth,
dried thoroughly and cooked
within two days. Store in the
refrigerator until cooking time,
covering the bird lightly with
waxed paper.
For the juiciest tenderest
turkey possible, most Canadian
authorities agree it is preferable
to roast turkey at a low
temperature—no hotter than 325
degrees. .
v, Length of toastin
depends on the size of the bird,
but generally you could expect
to cook a ten pound turkey for
about four hours and a 30
pound bird for about eight to
ten hours.
To make smooth turkey
gravy, use one to two
tablespoons of drippings from
the roasting pan and two
tablespoons of flour for each
cup of liquid. Stir the flour into
the fat and add the COLD liquid
(water). Stir until thickened.
Season and serve. Two cups of
gravy usually serves six people.
To make ruffles for the ends
of the drumsticks, cut holes in
the centres of small doilies and
slip over the boney end of the leg.
You may prefer to use fringed
aluminium foil. Fasten in place
with tape or ribbon.
Pieces of green pepper
studded with raw cranberries
(use toothpicks as holders) can • be made to look like holly for
garnish on the turkey
platter—but please, not too
much garnish to bother the one
who does the carving.
For using left-over turkey,
cold or hot, I have discovered
two nice recipes you may like to
try.
TURKEY SALAD
3 cups diced cooked turkey
1 cup diced celery
1 cup diced apple or pineapple
1/2 cup mayonnaise
1 teaspoon salt
1/2 cup slivered blanched almonds
1/2 cup desiccated coconut
Mix turkey, celery, fruit and
mayonnaise. Toss lightly and
chill. Just before serving,
sprinkle with salt, almonds and
coconut. Toss to coat pieces.
Serves 6.
CANDELIGHT CASSEROLE
1/2 cup chopped onion
1/4 cup diced celery
2 tablespoons butter
1 can (10-oz.) cream of chicken
soup
1/3 cup milk
2 tablespoons chopped parsley
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
I/4 teaspoon pepper
3 cups diced cooked turkey
2 cups cooked Brussels sprouts
1/2 cup crushed potato chips
Saute onion and celery in
melted butter until onion is
transparent (2 or 3 minutes).
Combine soup and milk, stirring
until smooth. Add parsley,
Worcestershire sauce, salt and
pepper. Place turkey in a greased
six-cup casserole. Cut-Sprouts in
halves and arrange on turkey.
Pour in soup mixture and
sprinkle with crushed potato
chips. Bake at 350 degrees until
bubbly (20 to 25 minutes).
Serves six,
If you are making a New Year

over, especially who have had
children, should have the test

A World Health Organization
Expert committee has agreed
that screening for cervical cancer
in women is the "most
rewarding of all" tests to detect
cancer.
The report notes that
virtually every patient could 'be
saved with available testing and
therapeutic measures.
Every type of cancer shows a
constantly improving cure rate
and the great tragedy is that
millions of people do not realize
that this is real "curability"
defined here as not just
prolonging life, but giving the
same life expectancy as that of a
normal person of the same age
and sex.
Early detection of cancer is
now possible for 50 percent of
all cancer sites accessible to
examination.
