We still haven't had any offers
of recipes for pies or special
desserts made from strewher ,
ries. Could be that most Weiner'

aren't .too anxious to share their
secrets with othere.
I'm not such a .good -cook mye
self but strawberries are so easy
to work with I feel safe in giving
you an extra tasty version of the
old favorite strawberry pie,
At pashwood where I Bye;
fruit pies are made with lots
of rich cream, sugar and a bit
of flour—too many calories for
the likes of me,
So I fill a baked pie shell
with a half quart of sliced fresh.
strawberries (the biggest and
nicest in the box). The remainder
of the strawberrieg are crushed,
sweetened and thickened with
cornstarch to give that beautiful
high gloss to the finished sauce.
Use the quantities you prefer.
The cooked berries are poured
over the berries in the pie shell
to fill up the holes and sweeten
the whole thing. Set it in the frig
to cool. It is best served with
whipped cream or ice cream.
Had one interested reader of
Tea 'n Topics call to give me
two recipes for strawberry jam--
one cooked, one uncooked. She
said the recipe for cooked jam
was very old. I suspect it is also
very good.
One word of caution before you
begin. Strawberries for canning
must be just right—ripe but not
over ripe. It is important that
berries used for jam are not
green.
COOKED STRAWBERRY JAM
1 cup ripe berries crushed
2 cups white sugar
Mix and let stand for a few
minutes. Boil for '7 minutes only.
Seal.
FREEZER STRAWBERRY JAM
2 cups mashed strawberries
4 cups sugar
Stir and let stand for 20 min-
utes. Acid a half bottle of pectin.

Hensall Spring Fair last week
and thoroughly enjoyed the fun,
The two judges, both registered
nurses, had a tough decision to
make. All the babies entered
were healthy specimens of the

Judges were looking for bright
eyes, clear complexions, proper
development and some hint to
their mental aptitude! The t'a some order isn't it?
We learned that baby show
contests are best held in the
early part of the evening before
mother and baby are tired of the
outing. Little eyelids start to
droop about eight o'clock and if
baby doesn't get to bed shortly
afterwards, mother has a,
screaming, writhing problem in
her arms,
Perhaps baby show organizers
could remember this for next
year's show,
By the way, our apologies go
out to Trevor Erb, son of Mr.
and Mrs. John Erb, Goderich,
We had his name spelled wrong.
Trevor won second prize in the
over six months class.
We don't intend to give the
impression that all children are
healthy and happy in Baron
County. Miss Clare au,Gowan,
director of the Children's Aid
Society in Goderich knows other-
wise.
At Tuesday's session of Huron
County Council she reported that
33 children had been taken into
care since January 1. On the
brighter side of the ledger though,
20 children have been returned
to their parents,
It isn't just "the establish-
ment" that has weddings this
time of year. The "in crowd"
has them too, though certainly
not in the conventional way we
have come to expect wedding
ceremonies to be.
We're speaking of course,
about the wedding in London last
Saturday at which guests from
miles around arrived on motor
bikes for a beautiful bash in
First Church of Christ Discip-
les: Most people shuddered at
the thought of using God's house
for a boosing brawl. Indeed even
the thought of grinding out a
cigarette on the main auditorium
floor of the church repelled most
people.
Though we certainly cannot
condone such action on the part
of the kids, we feel a trem-
endous amount• of respect for
the minister of that London
church who saw fit to open his
doors for the rather way-out
performance.
Surely the act of this cour-
ageous preacher cannot have
fallen on all blind eyes—nor his
silent message on all deaf ears.
Who can tell what impressions
were made on how many young
minds at the service?
