ROASTING COFFEE
This process should be care-
fully watched and superintend-
ed. When the berry crackles and
becomes crisp it is sufficiently
roasted. Once taken off the
roaster, it should be placed in
several thick folds of flannel to
preserve the oil and aroma. When
cool, place it in an air-tight can-

A candlelight service amid
baskets of mixed all-white flow-
ers formed the setting in St.
Martin-in-the-Fields, Oakridge
Acres, London, for the marriage
of Pauline, youngest daughter of
Mr. and Mrs. S. Aquilina, Ex-
eter, to Gregory Walter, only
son of Mr. and Mrs. W. Spencer,
Hensall. The Reverend H. R.
Montgomery officiated for the
ceremony.
The bride chose an original
ivory peau de soie gown styled
on princess lines with flowing
back shoulder panel extended in-
to a train. She carried a cascade
of white roses and trailing ivy.
The bride and groom were
attended by Miss Cathy Turner
of London, and Mr. Roger Cann
of Waterloo University. A wed-
ding reception followed at Glen
Allen.
The bride is a graduate of St.
Michael's School of Medical Re-
cording Librarians, Toronto, and
was on the staff of St. Joseph's
Hospital, London. The groom is a
graduate of University of Western
Ontario and is at present on the
teaching staff of Annandale Sec-
ondary School in Tillsonburg.
A Home Cook Book, compiled
by ladies of Toronto and chief
cities and towns of Canada and
published in 1877, points out
the differences between the
homemaker of the 1880s and of
today in social observances, in
the feeding and caring for her
family and in her kitchen and
its utensils.
The book is indeed a treasure
owned by Mrs. Eileen Fulcher
and in the foreword states that
'ewe have no schools of cookery
in our Dominion where our young
ladies may learn that art which
the ancients deemed second only
to medicine. The Home Cook
Book is intended to supply the
place of such a school."
In the first chapter on ',House-
keeping" is written "Success in
housekeeping adds credit to the
woman of intellect, and lustre
to a woman's accomplishments.
It is a knowledge which it is
as discreditable for any woman
to be without as for a man not
to know how to make a living,
or how to defend himself when
attacked. So, no matter how tal-
ented a woman may be, or how
useful in the church and society,
if she is an indifferent house-
keeper it is fatal to her in-
fluence, a foil to her brilliancy
and a blemish in her garments."
Futhermore is stated "There
is no earthly reason why girls
from eight to eighteen should
not learn and practice the whole
round of housekeeping, from the
first beating of eggs to laying
carpets and presiding at a din-
ner party, at the same time
that they go on with music, lang-
uages and philosophy. The
wealthiest women of the oldest
families in society are not above
seeing to household duties them-
selves and they know how it
should be done. If Mrs. Smith's
sitting room is always neat and
fresh it is because she sweeps
it with tea leaves and sponges
the carpet with ox gall and dusts
it with a damp cloth and keeps
a doormat on the porch."
Here is another injunction:
',and don't let anybody lay it
to you that you are pampering
your family and devoting your-
self to a low sphere of action.
You are doing no such thing, but
are giving them strong, active
bodies, steady nerves and tem-
pers and clear brains to meet
their work with. By just so much
as you neglect your part of the
work, they will fail in theirs.
You are the engineer to feed the
fires and keep the wheels oiled
and the whole family system
depends on you. Don't dare to
call such work low."
In a portion of the book devoted
to ',Social Observances" are
these rules: The simplest society
duty is, that of making calls. A
newcomer should return each call
within two weeks after it is made.
Calls are due a hostess two days
after a dinner party and a week
after a small party. From three
to six are proper calling hours
and a visit may be from five min-
utes to half an hour — never long-
er.
