Add cream; add sifted flour and baking powder and salt. Bake in 8" greased pan for around 30 minutes at 350 degrees. Mrs. E. E. Riley, Hensall. APPLE CAKE Batter is thick and hard to spread. 2 eggs 3/4 cup white sugar 3/4 cup mazola oil 1 1/2 cups all purpose presifted flour 1 tsp baking powder pinch of salt 5 large apples or 7 small ones (washed, peeled, cored and sliced in approx. 16ths) A mixture of cinnamon and su- gar to use for sprinkling as de- sired. Grease 8" x 8" square pan with mazola oil. Beat well together the eggs, white sugar and the mazola oil. Add the flour and the baking powder and pinch of salt. Spread one-half of batter on bottom of pan and arrange the sliced apples on top and sprinkle with 1/2 of the cinnamon and sugar mixture. Spread on rest of batter. Sprinkle top lightly with the remainder of cinnamon and sugar mixture. Bake at 350 degrees for 1 hour or until top is lightly browned; yields 9-12 servings. Mrs. Lee Sherman, Exeter. DATE AND NUT MERINGUES Yield 40 cookies. Preparation time: 15 minutes. Ingredients: 2 egg whites 1/2 cup fine granulated sugar 1/2 tsp vanilla 1/2 cup chopped nuts (finely chopped) 1/2 lb dates cut fine 2 oz glace cherries, cut up Method: Beat egg whites until stiff and dry. Beat in 6 tbl sugar a spoonful at a time. Continue beating until mixture will hold its shape. Add vanilla, then fold in rest of sugar. Fold in fruit and uuts.. COOKIES FRYING PAN COOKIES 1 1/2 cups chopped dates 1 cup white sugar 2 eggs beaten Cook slowly for 10 minutes in greased skillet mixing well. Cool. Add: 2 heaping cups rice krispies 1 tsp vanilla 1/4 cup cherries Drop in small balls and roll in cocoanut or chopped nuts, no baking necessary. Mrs. Homer Russell, RR 1 Exeter. CANADA, WAR CAKE 2 cups brown sugar 2 cups hot water 2 tbl lard 1 pkg seedless raisins 1 tsp cinnamon 1 tsp cloves Boil all this 5 minutes after it begins to bubble. When cold add 2 cups flour, 1 teaspoon baking soda dissolved in 1 tea- spoon warm water. Bake in two loaves in slow oven. EMERGENCY FROSTING 1 egg white 1/2 cup tart jelly 1/4 tsp salt Place unbeaten egg white, salt and jelly in a small bowl in hot water. Beat until jelly is dissolved and the frosting stands in peaks. FRUIT COCKTAIL CAKE 1 1/2 cup granulated sugar 1 1/2 cup sifted flour (pastry) 1 1/2 tsp soda 1 tsp baking powder 1/2 tsp salt Method: Sift dry ingredients together in bowl, add 2 eggs and 15 oz can of fruit cocktail.Beat well and pour in greased pan 9" x 13". TOPPING 1/2 cup brown sugar 1/2 cup chopped nuts. Sprinkle this over batter. Bake 350 degrees for 45 min- utes. Cut in squares and serve with whipped cream. TOMATO SOUP CAKE 2 cups flour, pastry 1 tbl baking powder 1/2 tsp soda add cloves, mace, cinnamon and nutmeg 1 cup seedless raisins 1/2 cup shortening beaten with 1 cup granulated sugar 2 eggs well beaten 1 tin of tomato soup Mix flour, baking powder, soda and spices. Cream shor- tening with sugar, then add all the rest and mix well. Bake in square tin at 375 degrees. Bake 40 minutes. Mrs. Fred H. Dixon, London. PEANUT BUTTER BARS 1 cup icing sugar 1 cup dates (cut fine) 1/2 cup peanut butter 1 tbl butter 1 tsp vanilla 1 cup chopped nuts and pinch of salt Mix well all together and roll in balls. Then melt 2 squares unsweetened chocolate and 1 inch of paraffin wax in double boiler. When all is melted soak balls one at a time in chocolate and cool. GUM DROP COOKIES 1 cup shortening 3/4 cup brown sugar 3/4 cup white sugar 2 cups flour 1 cup shredded cocoanut 1 cup cut up gum drops (I use scissors to cut) (No black ones.) 1 cup fine oats 1/4 teaspoon salt 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon vanilla 2 well beaten eggs Mix all thoroughly. Make into little balls. Put on cookie sheet and press with fork d ippe d in milk. Bake at 350 till golden brown, about 10 to 12 minutes. This makes 8 to 9 doz. small cookies.
