PUMPKIN PIE
3 eggs
1 cup brown sugar
3 2/3 cups pumpkin (1 large tin)
1 tsp ginger
1/4 tsp salt
1 tsp cinnamon
2 cups milk.
Beat eggs until frothy, add
sugar, then pumpkin and sea-
sonings. Add milk.
Pour into 2 uncooked pie
shells. Bake at 350 degrees
for 35-40 minutes. (oven can
be lowered to 325 degrees for
last 15 min.)

CHOCOLATE MARSHMALLOW
ROLLS
24 miniature marshmallows
2 eggs
1 1/2 cups icing sugar
3 squares unsweetened choco-
late
1 cup chopped nuts
Mix icing sugar, marshmal-
lows and nuts, beat eggs, add
melted chocolate and mix to-
gether. Sprinkle coconut on
waxed paper and roll. Place in
freezer and slice as needed.

LEMON RICE
1/2 cup rice boiled in water
salted slightly, until soft.
Have ready:
1/2 cup white sugar
4 egg yolks
grated rind of 1 lemon
1/2 qt of milk
Cook slowly in slow oven for
1 hour. Then put on top:
4 egg whites beaten well
1 cup white sugar
juice of 1 lemon
Put back in oven and brown
slightly — serves 6 persons.

ORANGE TARTS
Juice of 2 oranges
1/2 lemon
1 cup white sugar
1 tbl margarine
1 tbl cornstarch
1/4 tsp salt
Grate the rinds of oranges
and lemon and put juice of or-
ange and 1/2 lemon and the
rest of the ingredients together
in a saucepan on the stove for
a few minutes. Do not over
cook, fill the unbaked tart
shells. Bake till still juicy.
These are the fastest tarts
to disappear I ever saw any,
where.

APPLE CRISP
Peel and slice apples to fill
a deep pie plate and sprinkle
with enough sugar to sweeten
and add 1/4 cup water.
Blend together 4 tbl butter,
1/2 cup brown sugar and 3/4
cup flour until mixture crum-
bles.
Sprinkle over apples and bake
in moderate oven until the ap-
ples are cooked and the top
well browned.
Serve warm with cream.

PINEAPPLE PIE
(makes filling for 2 pies)
1 can crushed pineapple
1 can water
1 cup sugar
let come to boil, add 4 egg
yolks
2 tbl cornstarch
Cook till it thickens; let cool;
pour into pie shells and use the
whites of the eggs to make
meringue on top.
