Have ready: 1/2 cup white sugar 4 egg yolks grated rind of 1 lemon 1/2 qt of milk Cook slowly in slow oven for 1 hour. Then put on top: 4 egg whites beaten well 1 cup white sugar juice of 1 lemon Put back in oven and brown slightly — serves 6 persons. Blend together 4 tbl butter, 1/2 cup brown sugar and 3/4 cup flour until mixture crum- bles. Sprinkle over apples and bake in moderate oven until the ap- ples are cooked and the top well browned. Serve warm with cream.
