Heat 1-3/4 cups milk and gradpally blend with dry ingredients. Stir and cook over medium heat 11441 the mixture Is very thick. Blend the remaining 1/4 cup milk with egg yolks and add. Mix well, Cook over hot water until the cream is about as thick as mayonnaise, Remove from heat and stir In vanilla. Cool completely. Turn into a baked p a str y shell. Chili 3 to 4 hours or overnight. Just before serving, arrange well-drained, cold poached pears over the top. Combine whipped cream, the 1 tbl sugar and 1/4 tp vanilla and .spoon over the top as desired, POACHED PEARS 1/2 cup sugar 2 cups water 2 tbl fresh lemon juice 1/8 tp salt 4 medium firm, ripe pears Combine sugar, water, 1 tbl of the lemon and salt. Mix well. Bring to boiling point, Wash and peel pears. Cut into quarters and remove cores. Rub with re- maining lemon juice to prevent discoloration. Add half the pears to boiling syrup. Cook, covered, 15 minutes or until pears are tender, Remove pears from syrup. Repeat to cook the remaining pears. Return the first cooked pears to the syrup and cool com- pletely. Arrange over top of the cream-filled baked pastry shell as directed above. Chill. If baking the pie shell espe- cially for this recipe add 1/3 cup confectioners' sugar to the dough and also 1 tp grated lemon rind. Add chopped olives and sweet or sour pickles to the bowl of cole slaw. They give new flavor to an old favorite.
