While July is designated. Sal-
ad Month salads are popular
any time, The cool smoothness
of gelatin makes it a good base
for summer salads.
Some suggestions helpful with
jellied salads include:
. gelatin until ~tightly
thickened 'I .the consistency of
unbeaten egg t before adding the
solid ingredients. Carefully fold
in well-drained. fruit or vege-
tables, distributing them even-
ly.
• For easier tunnolding oil
the mold or rinse it with coif]
water before putting in the gela-
tin miN lure.
• To make a definite pattern
with fruit or vegetables, ar-
range in a thin iay-er of thick ,
ened .gelatin, Chill until firm,
then add remaining gelatin,
• in making layered salads
be sure each layer is firm be-
fore adding the next one,
• Prepare large jellied sal-
ads a day ahead of serving, so
they will he thoroughly set.
• To unmold, loosen edge
with a spatula or a small knife
dipped. in warm water. Then
quickly immerse the mold just
to the top in lukewarm water.
Shake the mold to loosen. Place
serving dish over top. invert
and carefully lift off mold,
• Moisten the surface of
large gelatin molds and the
serving plate before turning out
as directed above. When the
two surfaces are wet, it's easy
to center the gelatin on the
plate. Remove excess moisture
with it towel,
Recently, at a wedding din-
ner in the church rooms many
workers hesitated to unmold the
jellies because they so fre-
quently had trouble in main-
taining the shape of the jelly,
We hen, the above suggestions
will help in this respect.
