lenge the admonition of the
Home Economics Service of the
Ontario Department of Agricul-
ture to "cook it right."
Good cooks need to keep up
to date on tools, temperature
and timing. Tools should be
chosen for the job to be done—
well constructed, easily cleaned
pots and pans of the right size
for the purpose; accurate meas-
uring equipment; sturdy, effi-
cient and practical mixing tools;
well-tempered, sharp knives and
extras chosen only because they
can do special jobs more effi-
ciently.
To be a good cook, do not de-
pend on guesswork to select
proper temperatures. Make full
use of the controls on stoves,
refrigerators and appliances.
Cooking thermometers are es-
sential for consistently good re-
sults,
Timing too is necessary in
good cooking. Therefore the
modern homemaker pays atten-
tion to clocks or uses the tim-
ing devices built into the stove,
If such equipment is not built
into the stove, it can be pur-
chased separately.
New cooks should. resolve to
become good cooks and good
cooks to become aware of new
developm ents.
