time of year but particularly

are bright ,and fresh -looking,
firm,. ripe and rosy -red- Check
to see that the berries through-
out the.box, are as good As the
ones on top. Also, check the bot-
tom of the box fol signs .of juice
having seeped through, if there
are pink stains it is very likely
that the bermes are overripe and
soft.
Damp berries spoil quickly so
don't wash them until you are
ready in use them, If you have
space for a tray in your refriger-
ator Ws a good idea to pour the
strawberries -out of the box and
spread them on the tray so the
air can circulate around- them.
Leave the hulls on the. berries
-until, after they are washed or
the berries may lose some of
their color and fla.vnr and he -
come a little watery in texture.

the June meeting of Willing
Workers Evening Auxiliary of
:lames Street United Church on
Monday evening. Mr. Clarence
Boyle was the projectionst.
The meeting was preceded by
a pot luck supper. President

1/4 cup cold water
1 cup whipping cream,
tivhipped
Crush strawberries, add sugar
and salt and stir well, Let stand
10 minutes. Soak gelatine in the
cold water for five minutes. Pour
off juice from strawberries into
a: saucepan and heat. Add soaked
gelatine, remove from heat and
stir until gelatine is dissolved
Add strawberries, then chill
When .mixture is partially set,
fold in whipped cream.
FOR DESSERT: Turn into a 4 -
cup mold and chill until firm.
Unmold and serve garnished
with whole berries. 6 servings.
FOR PTE; Turn into a 8" baked
pie shell, chill and garnish.
Strawberry Ice Cream
1 t/2 cups milk
2 egg yolks
1/2 cup sugar
1tbl. flour
few grains salt
1 cup crushed, fresh straw-
berries (sweetened)
2 egg whites
1 cup whipping cream
Scald milk in top of double
boiler, To slightly beaten egg
yolks acid sugar, .flour and salt.
Add a .small quantity of the
scalded milk blend well and re-
turn to remaining milk.. Cook un-
til mixture coats the spoon. Coot
and add crushed strawberries.
Pour into freezing tray and
freeze to a. mush. .Remove from
refrigerator and fold in stiffly
beaten egg whites aficl whipped
cream. Return to frig and freeze
for 2 to 3 hours. 6 to 8 servings.
Glazed Strawberry Tarts
1 quart box strawberries
4 tbl, cornstarch
1/2 cup sugar
few grains salt
1/4 cup water
1/2 tp. lemon juice
Wash, hull and drain strawber-
ries. Crush one cup reserving the
remainder to fill tart shells.
Place crushed berries in a sauce-
pan and bring to a boil. Remove
from heat and put through a fine
sieve. Make a paste of the corn-
starch, sugar, salt and water
and add this to sieved berries.
Return to heat, stirring constant -
y until the mixtire boils and be-
comes clear -- about 3 minutes.
Cool slightly and add lemon
wee. Place drained. berries in
ndividual baked tart shells.

Makes 1 dozen medium tarts.
Strawberry Float
1/2 cup strawberry syrup
3 cups milk
3 large scoops vanilla zee
cream
Spoon syrup into 3 tall glasses.
Add milk and stir well. Float ice
cream on top.
Strawberry Syrup
2 cups hulled strawberries
1 1/4 cups sugar
Crush strawberries in sauce-
pan. Add sugar and .mix well.
Cook over low heat, stirring con-
stantly until soft about five
minutes, Press through a fine
sieve. Store in refrigerator.
Makes about 1;i cup syrup.
