We were in one of the stores on Fri- day when two of our local ladies were hurriedly making a few pur- chases on their way to a busy afternoon sorting and marking articles for the rummage sale. With one accord they spied some bunches of asparagus .anti each bought one to serve on toast for supper with a cheese sauce. We'll confess we borrowed the suggestion too. Do you know if you add a couple of sliced bard -cooked eggs to the sauce you use over the asparagus you have a nourish- ing meal in itself or it can be served as a casserole dish. Asparagus Casserole . 1/2 pounds or one large • bunch of asparagus 1/4 cup butter or margarine 1/4 cup flour 1/2 tsp. salt 1/8 tsp. pepper 2 cups milk 1/4 cup asparagus water 1 cup grated cheese 3 hard cooked eggs 1/2 cup flaked ready -to -eat cereal 2 tbsps. melted butter. Cook asparagus in boiling salt- ed water until tender. Make a sauce by melting but- ter in a saucepan, stirring in flour and seasonings, then slowly stirring in milk and vegetable water, then cheese. Stir and cook until smooth and thickened. settee. Top with crushed cereal flakes mixed with melted butter. Bake in a moderate oven of 350 degrees until bubbling hot. This amount will make 6 to 8 servings. Our neighbors are using the first rhubarb from their gardens and nothing seems to bit the spot like the first rhubarb sauce or first, rhubarb pie. Here is a recipe for a rhubarb pie with a crumb topping which is a favor- ite with the Hopper family. Rhubarb Pie tA1 Airs. E.Hopper) R. 2 cups rhubarb, cut up 1 cup white sugar 2 tbsps. butter 2 tbsps. flour 1 egg Mix well and put in an un - baked lower crust. Matte a crumb topping by combining 2 tbsps. brown sugar, 4 tbsps. flour and 2 tbsps. butter till crumbly and put over top of the rhubarb. Bake until topping is brown. Mrs. Hopper uses this same recipe for peach pie and it is well liked too. A slightly different version of the open rhubarb pie is to use 2 cups rhubarb 1 cup sugar 2 tbsps. butter 3 tbsps. flour 2 egg yolks Beat together sugar and egg yolks, flour and melted butter, Mix with rhubarb. Place in un - baked crust and bake at 350 de- grees till tender. Arrange in buttered. casserole, Make a meringue with the 2 alternate layers of cooked aspar- egg whites and 4 tbsps, sugar, lgus, sliced eggs and cheese Brown slightly at 300 degrees. risee, eses else 1 1,11, sus, ll,,lll!MI Il+,l,l,111111111M1111111.111111111111111111111111 lllllnnll„Illanllltlnlnll,,' 5 "VILLAGE STORE" CENTRALIA TISSUE & DAN RIVER GINGHAM yd. $1,19 CHINO CLOTH Sand, red, navy etc., 42" wide yd. 891 CHINO CLOTH, stripes yd. $1.19 SEERSUCKER, pastels yd. 49¢ DRESS SATEENS, floral. yd. 98¢ BROADCLOTH, finest, mercerized ,,, ..,...,,tyd. 69¢ CLEARANCE OF PRINTS & POLISHED COTTONS ..... .,..... 3 yds. $1.00 LADIES' COTTON SLIPS, shadow panels . $1.98 SPECIAL PRICE ON LADIES & CHILDREN'S SUMMER FOOTWEAR Simplicity Patterns — Sewing Accessories Magazines — Art Supplies Full Line of Fresh Foods Daily Delivery to P.M.Q.
