AREA HEALTH NURSE—Miss Sally Goertzeh, who re-
cently moved here to take over the district office of
Huron County Health Unit, says she enjoys her busy
life helping to keep people healthy. Baby care is an
important part of her work. —T -A Photo
District Health Nurse
Enjoys Busy Schedule
A busy person in the commu-
nity and yet a happy one be-
cause she is doing what She has
always wanted to do is the pub-
lic health nurse for Exeter dis-
trict, Miss Sally Goertzen.
As a girl, Miss. Gpertzen hoped
some day to be a nurse and as
she finished her academic edu-.
cation at Eden Christian College,
a private school near Niagara
Falls, she was encouraged to
enroll as a student nurse by a
friend who was already in train-
ing. Ironically, this friend did
not finith her course.
Miss Goertzen trained at Tor-
onto General Hospital and took
another year's course for pub-
lic nurse at the University of
Toronto, graduating in 1955. She
spent the next year in "VVingham
as one of the six nurses of the
Huron County Health Unit under
the supervision of Miss Jean Fal-
coner.
Miss Goertzen has been in Exe-
ter a little more than a month
but she is already well esta-
blished and busy with clinics,
prenatal classes, home : and
school visiting. The public health
nurse visits the babies born in
the hospital and follows up wth
visits in the home.
"Many people think that we
just call on the baby, in the home
but in reality we check all the
members of the family," ex-

'N THAT'
By MRS. J. M. S.
The nippy, busy days of
autumn accent the importance
of sustaining and nutritious sup-
per main dishes.
Homemakera realize that an
ideal way to make sure the
family gets all the nutrients it
needs for energy to carry on in
school and at the office, is to put
them all in a steaming savory
stew. '
Reinforcing the protein of meat
with vital vitamins provided by
fresh vegetables,the lowly stew
is 'really a meal i itself. To cite
a few of the vegetables often
found in stew, tomatoesare
triply generous with. .vitamins;
carrots contribute a bounty of
vitamin A cup of carrots
yield twice the daily bodily re-
,quirement), potatoes provide
phosphorous, calcium; iron and
vitamins A and C; the popular
onion is rich in food energy' and
vitamins.
Just the combining of several
vegetables with meat in a stew
means a mutual strengthening
of their food value. Happily, a
stew is one of the easiest main
dishes to, preiiare and to serve,
and, there are so many -varia-
tions on the basic stew theme
that stew once a week is a
practical habit for clever cooks.
The Canadian Fruit and Vege-
table Associdtion offers a recipe
for Fresh Vegetable and Chicken
Stew and we feel that the com-
paratively low price of chickens
warrants us using them in this
way.
Fresh Vegetable and
Chicken Stew
3 to 4 pound chicken
2 to 3 tbsp. shortening
1 tbsp. salt
2 cups hot water
tsp. black pepper
12 small whole onions
1 cup sliced carrots
1 cup peas, 'lima beans or Snap
beans
1 cup diced potatoes
cup flour
cup water
Cut chicken in serving pieces
and brown on all sides in hot
shortening, Place in saucepan
with next three ingredients.
Cover and cOok 1 honk or until
chicken is tender. Add vegetables
about 30 minutes ,before cooking
time is up. Combine flour with
the water and stir into the stew.
until it thickens to desired con-
sisteney,
As we mentioned befere, this is
only a basic recipe and you on

wife, she said, "Oh, I make stew
Out Of theleftovers in the re-
Itigerator, and .We call it !refrig-
enter stew'."
To add flavor to stews, try
substituting chicken or beef
bouillon for the water called for
in the recipe.
To give a rich brown O• W in
meat and vegetable stews add a
Mw drops of kitchen bouquet.
Tf3 give stews that "punnet"
look, add some fresh mushroom
halvet, sauteed in butter te• your
