Since this is our first column
after January first, we want
to wish you all a happy New
Year. And let's begin the new
year with a prayer for peace
throughout the world in 1957.
*
We have some suggestions to-
day that may be used in plan-
ning a New Year's Eve lunch,
In a little recipe book loaned
to us by Mrs. James Paton of
Clandeboye, we found a casser.`
ole dish that can be prepared
ahead of time and slipped into
the oven forty minutes before
serving time. It sounds like a
tempting supper dish for any
day of the year.
Tuna-Macaroni Supreme
(Airs. James Paton)
1/2 lb. large sea-shell macar-
oni
SS cup all-purpose flour
1 tsp. salt •
2 tsps. Worcestershire sauce
4 hard-cooked eggs
2 cans chunk-style tuna
5 Tbsps, butter
4 cups ,milk
1.44 tsp. pepper
2 cups (1/2 lb.) grated cheese
1 cup fresh bread crumbs
Early in the day: Cook macar-
oni until barely tender. Drain:
rinse with hot water and drain
again.. Turn into 2 qt. casserole.
In sauce span melt butter, stir
in flour. 'Add milk stirring until
smooth and thickened. Add salt,
pepper, Worcestershire sauce
and 11/2 cups grated cheese.
Chop eggs coarsely. Scatter eggs
and tuna chunks over macaroni.
Pour cheese sauce over all.
Sprinkle with bread crumbs
combined with rest of grated
cheese. Refrigerate, About 1
hour before serving time start
heating oven to 375°. Let cas-
serole stand at room temper-
ature about 20 minutes. Bake
uncovered for 40 minutes or un-
til browned and bubbling. Makes
8.10 servings.
81 * *
If the cookie supply is run-
ning low here is a quick way to
replenish it for these peanut
butter squares do not require
baking. Miss Meta Salter, who
gave us this recipe, thinks the
cookies are nicer when a day
or two old but you may have
to hide them if you want them
to reach that age.'
