FACE FOUR TESTED RECIPES The following method for roasting •turkey and recipes for serving this delicious meat in various ways are given for use during the Christmas season when turkey holds the stage as far as foods are concerned. Roast Turkey Wash turkey after it has been drawn, rinse and dry well. Rub inside of gird with salt before adding dress ing. Allow about %, cup dressing for -each pound of turkey. Pack dressing loosely into body and neck of turkey. Sew up openings. Truss bird by turn ing tops of wings under back and pressing legs close back against the body. Hold in place by inserting skewer under the wings and another under the legs. Then tie turkey in shape with cord, fastening it to skewers. Place turkey breat side down on rack or crossed skewers in roast ing pan. Bake in a moderately slow oven, 300 degrees F. allowing 20 min utes per pound dressed weight; for turkeys under 10 pounds allow 25 min utes per pound. Baste occasionally during roasting. Turn turkey on back for last hour of roasting to uniformly brown the bird. Savoury Dressing 2 cups soft bread crumbs 2 teaspoons salt Va teaspoon pepper 2 teaspoons savoury % cup melted butter or bacon fat 1 cup chopped apple, celery, chop ped pork sausage or chopped bacon 2 tablespoons finely chopped on ion or parsley may be added Mix all ingredients together. This recipe makes dressing for 10 to 12- pouud turkey. For a moister dressing pour 1 cup boiling water over bread crumbs and add beaten egg with the i $ melted fat. I 5 Giblet GravySimmer the giblets (liver, gizzard and heart) and the neck in a quart of water or for about an hour or until tender. Leave about 1 cup fat in pan after removing roaster chicken or turkey. Stir in % cup flour. Gradually add cool broth and enough cold water to make a,smooth thin gravy. Cook for 5 minutes,"stirring constantly. Add chopped giblets. Season to taste with salt and pepper. Blend in flout. Add milk. Stir constantly until mixture thickens. Add turkey, mushrooms, chopped pimento and seasonings. Heat thoroughly. Pour some of mixture ©ver beaten egg yolks. Add to mix ture and cook 2 minutes. Serve on hot toast or waffles. Serves 4 to 6. Turkey Salad Mould tablespoons gelatine cup cold water cup salad dressing cup celery, cut fine cups cooked turkey, diced % cup chopped, unpeeled apple, ■chopped pimento or green pep per. Soak gelatine in cold water. Dis solve over hot water and add to salad dressing. Fold in turkey, celery and apple. Season to taste. Mould and chill. Unmoulded on crisp lettuce. Serves 6.
