Cream butter thoroughly, add sugar gradually, and cream to­ gether well. Add egg and beat very thoroughly. Add flour, alternately with milk, a small amount at a time, beat­ ing after each addition until smooth. Add vanilla. Turn into greased cup­ cake pans, filling them % full. Bake in moderate oven (375 degrees F.) 20 minutes, or until done. Makes 2 dozen cup takes. Insert little tandleS* and light just before serving. Cover with cocoanut seven minute frosting. Sift dry ingredients and add to first mixture alternately with the sour cream. Place in refrigerator and chill over night Roll a small part of the dough at a time, cut and bake in a moderate oven, (375 deg. F.) for about 10 minutes. Yield: about 254 dozen large cook­ ies. Christmas Plum Pudding One-half apple, chopped; 2 eggs, well beaten; 54 cup figs, chopped; 54 cup citron, sliced; 54 cup suet, chop- ped; Vs cup milk; 54 cup raisins; % cup candied cherries, quartered; % cup molasses; 2 cups sifted flour; % cup currants; 1 tablespoon candied orange peel, chopped; 54 cup almonds, blanched and chopped; 2 teaspoons baking powder; % teaspoon salt; 54 teaspoon soda; 54 teaspoon cinnamon; 54 teaspoon allspices; % teaspoon nut­ meg; 2 wine glasses brandy. Combine apple, suet, molasses, eggs, and milk. Sift flour once; measure. Mix % cup flour with fruit and nuts. Combine remaining flour, baking powder, salt, soda and spices and sift again. Add to molasses mixture. Add fruit and brandy. Turn into well- greased molds, filling % full. Cover tightly. Steam 3 hours. Serve hot with Butterscotch Hard Sauce, or with a sauce of straight brandy which has ‘been set aflame just as it is brought to the table. White Fruit Cake One pound butter, 1 pound white sugar, 1 pound raisins, 114 pounds of flour (sifted), % pound citron peel, 54 pound almond nuts, 54 pound cher­ ries, 9 eggs (beaten separately), 1 tea­ spoon baking powder (sifted with flour), grated juice and rind of on& lemon. Method: Cream sugar and butter;, add beaten yolks, lemon, half of flour half whites of eggs and beat welL Then add remainder of eggs, flour and citron. Use candied cherries. This keeps well. Chop the raisins, suet, ap­ ples, peel and almonds. Add to the cider the raisins, suet, apples, citron,, currants and sugar, and cook slowly for one hour.
