And so many things still to be donel Everyone gets into an awful rush just before ithe actual day but home-makers have to plan everything well in advance and get working on the innumerable culinary details be­ forehand. This year there is the added worry of more careful budgetting to make Christmas all it should be. The temp- taition might be to slack a bit because the problem at times seems too much, 'but we think the extra work of sur­ mounting the difficulties will make the season mean more to everyone. For instance, other years you’ve probably made two Christmas cakes, one white and one dark. Perhaps this year, even with all the economic strat­ egy you’ve been able to muster, you may only be able to make one. The ideal cake then, is this combination “light and dark” Ribbon Cake. Nuts, spices, candied fruit and coconut, ev­ erything that a fruit cake should have, ■go into it. This cake will play an im­ portant role is holiday entertaining because it keeps well, slices beautiful­ ly and most important, is delicious. Ribbon Fruit Cake Dark fruit cake mixture 2Vs 1 y2 y? cups sifted cake flour teaspoon baking powder teaspoon cloves teaspoon each cinnamon, nut­ meg, and allspices teaspoon salt cups seedless raisins currants finely cut citron chopped walnuts cups cups cup butter pr other shortening cups sugar egg yolks, unbeaten cup cold coffee 1 2 2 cups 1% • iy3 i iy2 6 % Sift flour once, measure, add‘bak­ ing powder, spices, and salt, and sift together three times. Sift Vs cup of flour mixture over fruits and nuts, ..mixing well. Cream butter thorough- .lypiidd sugar gradually, and cream ito- .until light and fluffy. Add egg 3ipl^S,: one at a time, beating thor- tougiily after each. Add flour, alter­ nately with coffee, beating thoroughly after each addition. Add fruiit mixture and mix well.
