Cream butter, add sugar gradually and beat until light, add beaten eggs eggs and mix thorough­ ly, then coffee and soda mixed with molasses and brandy, then flour which has been sifted with spices, fruit dredged lightly with flour. Bake in moderate oven. White Fruit Cake Raisins, white, 1 pound (3 cups), cherries, candied, chopped, Yz pound (2 cups), pineapple, candied, chopped, 14 pound (1% cups), citron, candied, chopped, 14 pound (1 cup), orange peel, chopped, 14 pound (1 cup), le­ mon peel, chopped, “| pound (1 cup), cocoanut, lYs cups (1 pound), al­ monds, blanched, chopped, 2 cups; flour, 2% cups; baking powder, one teaspoon; salt, 1 teaspoon; butter, 1 cup; sugar, .1 cup; ejggs, 3, separated; fruit juice, 1 cup. Wash raisins, dry. Combine with remaining fruit nut meats. Sift flour, measure sift twice with, baking powder salt. Cream butter, gradually sugar and continue creaming, well-beaten egg yolks. Alternately add flour mixture iwth fruit juice; add fruits and nut meats. Fold in stiffly beaten egg whites. Pour into 2 buttered loaf pans lined with un­ glazed paper and butter again. Bake at 300 degrees F. for 2 hours. Quick Fruit Cake One-half cup shortening, 1 cup brown sugar, 1 egg, 1 cup mince meat, Yi cup milk, 2 cups flour, 2 teaspoons baking powder, Yt. tea­ spoon cloves, 14 teaspoon cinnamon, 14 teaspoon salt, 14 cup chopped nuts, 14 cup chopped candied fruits. Cream shortening and gradually add sugar. Cream again. Beat egg, add and beat well. Add mince meat and beat well. Sift dry ingredients together. Add alternately with milk to mince meat mixture. Fold in the chopped nuts and fruits. Grease loaf pan, line with greased paper and in cake. Bake in moderate oven degrees F.) for 1% hours. Christmas Tartlets Make a filling of 1 cup sultana rais­ ins;, 4 tart apples peeled and diced fine; lb cup sugar, 2 tablespoons le­ mon juice, 1 teaspoon grated lemon rind, 2 tablespoons water. Cook un­ til apples are tender, then add 1 cup walnut meats. Cool. Fill into baked pastry shells, top with whipped cream, and decorate with candied cranberries. Almond Icing Paste One pound blanched almonds, 1 teaspoon orange flower water, 2 lbs. icing sugar, 2 eggs, 1 teaspoon al­ mond essence. Put almonds through grinder, using finest cutter. Mix sng-|mer residents of that section. De­ ar in well. Add beaten eggs, orange flower water, and almond essence. Knead mixture well with hand as in and and and add Add >1 14 % li % Combine gelatine, salt and spices; add warm water and stir until gela­ tine ip dissolved, Chill. When slight­ ly thickened, fold, in combined fruits, nuts and Grape-Nuts, Turn into mold, Chill until firm, Unmold. Serve with whipped cream flavored with nutmeg, Serves 10. ** Mincemeat Two pounds lean beef boiled until tender and chopped fine when cold, 1 pound suet (less will do), 5 pounds juicy apples (chopped), 2 pounds each of seeded raisins, seedless rais­ ins and currants, Y& pound citron or mixed peel, 3 tablespoons cassia, 2 tablespoons cloves, 1 tablespoon all. spice, 1 nutmeg (or about 2 tea­ spoons), 1 tablespoon fine salt, 3 lbs. brown sugar, % gallon cider (or mild vinegar and water), 1 orange, 2 lem­ ons. This makes about 8 or 9 quarts. It will keep 'for some time. Boiled Frosting lYz 'cups sugar % cup water egg whites, beaten stiff tsp. baking powder tsp, flavoring 3 & i Method: Gently boil sugar and water to long thread stage, 238 de­ grees F. Pour it in a fine stream ov­ er the beaten egg whites, beating for about three minutes or until the mix­ ture thickens. Special at . .$2.95 ceased was born near Harriston, but came to the Belmore neighborhood when he was but a lad. His entire life was spent there, with the excep­ tion of two years which he spent in the United States, where he went for the benefit of his health. The death of Mr. Johann has cast a deep gloom over the entire community, as he was well known and very highly respect­ ed by all. He was a member of the Belmore United Church, a ’member of the Session, teacher of the Bible class, and also was secretary of the Belmore school section for many years. His place in the community will be very difficult to fill. He is sur­ vived by his widow and three child­ ren, Stewart, Wilfred and Ruth; also by a sister, Caroline, residing at Cal­ gary, and three brothers, Henry, of Belmore, Otto of Owen Sound,.and Hugo, of Toronto. The funeral took place to McIntosh cemetery, follow­ ing a private service at the home, conducted by Rev. W. J. t Rayner of Belmore. The pallbearers were: Messrs. Arthur Fitch, Arnold Halli­ day, Roy Rutherford, Thomas Abra­ ham, J. Scott Inglis and Jas. S. Mix steamed, strained and mashed pumpkin thoroughly with salt, ging­ er, cloves, cinnamon, eggs, sweented condensed milk and water,. Pour into unbaked pie crust. Bake in hot Ovett (450 degrees F.) 10 minutes, then re­ duce temperature to moderate (350 degrees F.) and bake about 35 min­ utes longer, or until filling is set, Snowhite Frosting To Double Boiler Frosting, add 1 dozen cut marshmallows while frost­ ing is still hot, Stir until melted be­ fore spreading oft cake.
