FOR THAT HAPPY DAY By Betty Barclay Is there a birthday in the offing in your home — is some eager-eyed youngster counting the days until the hour of the big party? No matter what other refreshments you. serve, all eyes will be focussed on the birth day cake — so it must be a grand one. Here’s the recipe for a birthday cake which has satisfied the palates of birthday celebrants from seven to seventy. Patty’s Birthday Cake 2 cups sifted cake flour 2 tsps, double-acting baking powder L tsp. salt 4 tbsps. butter or other shortening 1 cup sugar 2 egg whites, unbeaten % cup milk L teaspoon vanilla Li isp. almond extract Sift flour once, measure, add bak ing powder and salt, and sift together three times. Cream butter thorough ly, add sugar gradually, and cream together well. Add egg -whites, one at a time, beating very thoroughly after each. Add flour, alternating with milk, a small amount at a time,, beating after each addition until smooth. Add flavoring. Bake in a greased pan, 8x8x2 inches, in moder ate oven (350 degrees F.) 50 minutes. Spread Seven Minute Frosting on top and sides of cake; sprinkle with moist, sweetened cocoanut, tinted a delicate pink. Insert tiny pink can dles in frosted cake. This cake may be baked in two greased 8-incli layer pans in moderate oven (375 degrees F.) 25 to 30 min utes. “Can I help you?” said the good- natured person a man who was un successfully trying to force a mule into a freight car. “Yes,” said the man, “tell me how Noah got two of these blighters into the Ark.” MONUMENTS at first cost Having our factory equipped with the most modern machinery for the exe cution of high-class work, we ask you to see the largest display of monu ments of any retail factory in Ontario.
