The Citizen, 2008-04-10, Page 28Spring’s sweet nectar has beenrunning well it seems. Despite a sluggish start to theseason, this year’s maple syrup is on
par with others, according to
Auburn-area producer Jeremy
Hanna.
“It’s an average crop and the
quality is a nice light syrup, nice
flavour.”
Hanna has been making syrup for
about 10 years, starting with a few
buckets on roadside trees when he
was 14. As he grew up, so did the
operation and for the past three years
he has been tapping about 2,000
trees.
Tapping started at the end ofFebruary but it was waiting game.“It was into March before we startedgetting any. It came on slowly.”Sap begins to flow whentemperatures rise above freezing fora few days. Up to two days of sub-
zero weather, followed by a
warming trend of plus +5°C is
optimal for good sap flow.
The consistent cold of January and
February was not the best situation
for maple syrup producers.
However, said Hanna, last week’s
warm weather has helped to keep
things coming. “Quality and
production are good. Last year I was
done by this time. It’s just been a lot
later to get the results.”
Extended season
Though the maple syrup season got off to a slow start with the cool beginning to spring, the
warming trend last week has helped to extend the season. Jeremy Hanna checks some of the
lines in his sugar bush near Auburn. Hanna taps 2,000 trees and sells his syrup through retail
and wholesale outlets. (Bonnie Gropp photo)
