As children, most of us were
told: Eat your vegetables .,.
they're good for you! As adults,
many of us repeat the same
thing to our children, This
statement is true - vegetables,
picked at their peak and
properly prepared are a source
of vitamins and minerals which
the body requires to keep going
and growing,
However, say food speci a lists
at the Ontario Food Council,
Ministry of Agriculture and
Food, vegetables are only
"good for you" if they still have
that goodness in them when
you eat them, Peeling, soaking,
prolonged cooking, large
amounts of cooking water, all
contribute to the loss of
vitamins and minerals. For
example, a medium potato con-
tains about 20 milligrams of
Vitamin C. Peeled, then boiled,
it retains 16 milligrams.
. Mashing further destroys the
Vitamin C, only 10 milligrams

At this time of year, flash
storms often account for power
failures which may cause en-
dless problems for the freezer
owner, Food specialists at the
Ontario Food Council, Ministry
of Agriculture and Food offer
sound advice as to whether to
refreeze or discard the food in
such an emergency.
The general rule "don't
refreeze" appears on most com-
mercially frozen food packages
and is still the best advice.
However, foods which you have
frozen and have partially
thawed, including vacuum
packaged meat such as bacon,
ham, and wieners, can be safely
refrozen if there are ice crystals
still present, This rule also ap-
plies to fruit, fruit pies, fruit
juice concentrates, meat,
poultry, fish, vegetables, and
"boil in bag" vegetables.
What is the fate of food
which is completely thawed,
but still very cold to the touch?
* It can all be safely refrozen,
with exceptions, The first ex-
ception is vacuum packaged
"boil in bag" vegetables which
should be removed from their
original package, cooked and
eaten immediately OR removed
from the package, cooked,
repackaged and refrozen,
„Another exception is commer-

No corrections this week - we
must be improving!! However*
before reporting the comings
and goings of some of our
citizens - the column would like
to help out by printing the
following 'inforniation please"
item,
Mrs, E. F. Foster Copp(the
former Louise Holmes) and a
granddaughter of the Doherty
family will be arriving next
week to visit Mr. and Mrs. Har-
vey Howard who now own the
former Doherty home on East
Street. Mrs. Copp is most
anxious to trace her relatives
on her grandfather's side. It
would be appreciated if any in-
formation relative to the pur-
chaser of the Doherty family
bible at the Doherty auction
sale many years ago could be
made known. Mrs. Copp's
great-grandfather was a
Depew and his wife Agnes
(daughter of Marguerite
Depew) was a teacher of
French in a Montreal school.
Great-grandfather Depew's
Christian name is unknown. A
nephew is also most anxious to
locate a Doherty piano for sale.
If any of our readers have any
knowledge of the Doherty or
Depew families would they
please contact Mrs. Harvey
Howard at 482-6644.

FOLLOW %OBEY'S RULES:
with us as more of our
holidayers return,
Mr. and Mrs, Hal Hartley
ere just back from a tour which
took them as far as Vancouver
Island. Having flown out of
Toronto in 00 degree weather,
it was somewhat of F1 change a
week later to be bussing
through Jasper National Park
in a snowstorm and riding in a
snowmobile out on the Colum-
bia Icefields in 25 degrees -
surrounded by glaciers,
Also on the occasion of
their 25th wedding anniversary
Mr. and Mrs, Frank Potter of
RR 3, Clinton, travelled by
plane for a ten day holiday
with Mr. and Mrs. Willard
Wasson and Glenn of Edrnon-
ton,Alberta, former residents of
Clinton. When residing in Clin-
ton, Mr. Wasson was manager
of the Stedman store. Mrs.
Wasson was a nurse on staff at
Huronview. They both wished
to be remembered to all their
friends here.
The Wassons took the Pot-
ters by car through the Jasper
Park area to Banff, viewing the
beautiful scenery and many
other points of interest along
the way. They returned to Ed-
monton by way of Calgary.
Weather conditions were ideal
throughout the trip. Western
farmers were busy harvesting
their crops in more comfortable
temperatures than Ontario far-
mers had experienced.
Prior to the Potter's trip,
they were pleasantly surprised
on two occasions back home.
Firstly by a group of their
friends at an evening barbecue
when they were presented with
a lovely gift, and secondly when
their families entertained for
them at a social evening and
marked it with a gift of an an-
niversary clock, All occasions
have left a lot of pleasant
memories.

Overcooking would have fur-
ther affect on the Vitamin C

Something can be done to
keep the nutrition "in". It
depends on what you do,
Greens such as cabbage, head
lettuce, and chicory should be
trimmed, but sparingly the
dark outer leaves are rich in
iron, caleiurn, and vitamins.
Potatoes should be cooked in
their jackets. The skin keeps
nutrients in.
Use very little water when
boiling vegetables, Some
vitamins and minerals cook out
into the water. Losses are
greater when a large amount of
water is used. If the nutrition
goes down the sink (when you
drain the cooked vegetables)
you and your family are the
losers. Don't worry about the
vegetables boiling dry and bur-
ning the pot - they shouldn't

radioautography, to map the struc-
ture of cells, was developed at
McGill University. Canadian re-
searchers are doing important work
in the fight against cancer and the
Canadian Cancer Society urges each
Canadian to do his part by learning
the facts about cancer.
