Page 8 THE TIMES-ADVOCATE, EXETER, ONTARIO, THURSDAY MORNING, FEBRUARY 23, 1950 Get away from business oc casionally. It’s cheaper to take a voluntary vacation than wait till the doctor orders it. No man can do more than his best, but a good many men can do more than they think is their best. Silver crest M HHH jMii Poultry Farm enters #■ We Were Pleased to Have Assisted with the Electrical Wiring AND SUPPLYING OF ELECTRICAL MATERIALS at Silvercrest Poultry Farm ip r o d u c e r s. of market in .South Huron, have a new .field of marketing, oven-dressed poultry, of last year, Edgar Cudmore made a tour In and of the of ex Exeter Radio & Electric PHONE 187-W V Large and Small Appliances V General Wiring of All Kinds V Radio and Appliance Repair DON JOLLY, PROP. Fowl Year Round Oven-Dressed degrees below zero and this to gether with the Cro-O-Vac bag •completely holds the flavour in and makes in many casbs a bet ter bird than when fresh killed because the freezing tenderizes them. They are held at 5 degrees below zero after freezing and are then ready for market. Fast freezing stops the clock as far as deterioration is concerned and the birds are farm fresh months after they are killed. Speaking of markets, the Cud- more’s intend to market their products thro u g h the retail stores and meat markets in the towns of South Huron as well as keeping a supply at the farm. The public will no doubt ap preciate this new service as up to the present it has only been available in some of the larger centres. Cut-uip . turkey, so that the average family may buy to meet their needs instead of buy ing a whole bird, may be an added line soon. the birds are properly finished and ready for market they are killed, semi-scalded at 124 to 128 degrees and are plucked by expert pickers. While still warm the are eviscerated (drawn). This work is supervised and every bird is inspected. As .soon as the eyiscertating is finished the birds are cooled in tanks of cold water and ice. This cooling takes several hours and the birds ■must be completely' cooled be fore they are packaged in a new type of bag known as Cro-O-Vac, This bag, made for the purpose, stays pliable at 40 degrees below zero and is so moisture-proof that experiments carried on by the Department of Agriculture show that 2000 pounds of turkey when packed weighed out at 199 9 pounds two years later with no freezer burn. At packing the .birds are weighed, the weight ticket placed inside the wrap per, plainly visible and this is the weight yon pay for, In this way you are not paying for head feet, entrails as in the old-fash ioned way. As soon as packed’ they are put into the sharp freezer at 25 Broilers Roasters - Capons S Serve Poultry Once A Week The Year Around New Field The Silvercrest Poultry Farm, leading poultry entered that of October Mrs, several States visiting with producers where this type marketing was carried on tensively. Believing that this would help to sell more and better poultry products in this district, Silver crest recently installed a new sharp-freeze plant to handle this new product. This plant was de signed and built at the farm by a local refrigerator expert. The poultry being packaged are turkeys and chickens and these are hatched by local hatcherymen and are of the high est quality. They have been fed on special rations manufactured by nationally known feed ex perts. The ’Cudmore’s believe that the proper mixing of feed cannot be done at home and so leave the feed question to those who know how.
