MacDonald, beloved wife of the late
William Gray, formerly of Goderich
Township in her 88th year. Sur-
viving are several nieces and
nephews, The funeral was held
from the Beattie Funeral Home,
linton, Tuesday, December 18 at 2
p.m. Rev, G.L. Royal officiated. In-
terment Maitland Cemetery,

GARBAGE COLLECTION
Christmas trees will be picked up by the Municipal
Garbage Collector on On* pick up Only, that on January
5, IOU. Christmas trees will not be picked up on any
other date.
The garbage contractor has requested that glees and
paper be each packed In Separate containers.

Aida T. Gray passed away at
Huronview on December 16,
1973. She was 87,
Mrs. Gray was born the for-
mer Alda T. MacDonald in
Goderich Township on January
3, 1886. She was a daughter of
the late James and Helen
MacDonald.
She was married to William
Gray, who predeceased her in
1947.
She is survived by several
nieces and nephews.
Funeral services were held
from the Beattie Funeral Home
on December 18 with Rev, G. L.
Royal in charge. Interment was
in the Maitland Cemetery in
Goderich.

Moist and tender, browned
to perfection, the Christmas
turkey should be thawed
carefully and cooked slowly,
say food specialists of the On-
tario Food Cduncil, Ontario
Ministry of Agriculture and
Food.
There are two ways to thaw
the bird. If your refrigerator
can accommodate the turkey,
all you have to do is set the
bird on a large tray to catch the
drippings, puncture the bag,
and wait. Allow 4 to 5 hours
per pound. Thawing in this
manner will keep the bird cold
at all times. Keeping the bird
cool is important — bacteria
can't , grow at cold tem-
peratUres,:-:. .' • —' '
Defrosting at room tem-
perature is not recommended.
At room temperatures (68 to
72°), the surface of the bird
thaws quickly, while the inside
is still frozen. The surface tem-
perature of the meat will be
above 40° for some time (40° is
the temperature at which bac.
teria start to multiply). If you
still choose to thaw at room
temperature; be sure to punc-
ture the bag and place the bird
on a tray, tilting it in such a
way as to let the juices run off,
As soon as the turkey is
thawed, it should be cooked, or
refrigerated, You can allow, at
the most, one day's delay in
cooking, but the bird will have
to be refrigerated.
To assure a tasty, juicy, ten-
der turkey, cooking time is
most important. Take the
turkey from the refrigerator
only one hour before putting in
the oven. This allows enough
time to stuff the turkey. Poultry
should not be stuffed ahead of
time.
Roasting at 325° is' most
satisfactory. Whether you stuff
or not, the total cooking time
will be the same. Roast with
thermometer in thigh to 185° or
thermometer in stuffing to
165°. If you don't have a ther-
mometer you will' have 'td rely
on a clock and calculate the
time according to the size of the
bird.
