Rival Mom's Apple Pie
Sauce Makes The Difference
In This Dumpling
Mom's special version of ap-
ple pie, made just the way her
Mom used to make it, is prob-
ably a favorite around your
house.
But don't restrict apples to
that use alone. New desserts
' made with the same flavorful
fruits may become almost as
popular with your family.
Bake apples individually in
tender pastry and serve warm.
The secret to this Apple
Dumplings recipe, developed
by the Holiday Inn of Jeffer-
son City, Mo.—Southwest, is
the sauce, Flavored with nut-
meg and a hint of lemon, this
sauce thickens as it cools.
Spoon it over the dumplings,
and let it soak into the crust
for a mouth-watering treat.
Whether you pick your own
apples from the tree or select
them at the market, be sure
to get firm, crisp apples.
Overripe ones yield to slight
pressure on the surface and
have mealy flesh.
Store your apples in a cool
place. Apples kept at a high
temperature quickly become
soft and mealy,
tr
Americans are fresh apple
enthusiasts. About 80 per cent
of the yearly apple crop in the
United States is used as fresh
fruit. The rest goes into juice,
jelly, apple butter, vinegar,
canned pie stock and apple-
sauce,
Consumers often ask "Why is
breafast bacon not leaner?"
"Why don't processors trim off
more of the fat?" The reason
is very simple, say food
specialists at the Ontario Food
Council, 'Ministry of
Agriculture and Food. Side
bacon, for better or for worse, is
always going to be one of the
fatter pork cuts. It is the com-
bination of lean And fat that
gives side bapon such unique
flavor and taste appeal,
While the fat on most pork
cuts can be readily trimmed off,
producing a product that's
reasonably lean: with side
bacon there is no possible way
of trimming or removing the
fat. The streaks of lean and fat
are interwoven in such a way
that any trimming is virtually
impossible.
As it goes through the
production line, bacon is sorted
for a good proportion anti.
distribution of the lean. Many
packers have 2 or 3 brand
names. They use one par-
ticular brand for all their first
selection bacon, another one for
their second selection, and so
on.

Several Months ago "super-
burger", "proteitibtirger" and
"thriftybutger" appeared On
the market across the country.
Essentially, all were the same
thing - a mixture of hamburg
and hydrated soya protein,
some 75 percent hamburg to 25
percent soya protein and some
70 percent to 30 percents
At that time these products
were the object of much in-
vestigation and -publicity. Many
people tried them and 'were
pleasantly surprised; Many
hesitated and still have not
tried theta. However., with a
growing world food Shortage 'we

regulations have been sent to
industry and corniumer groups,

on the retail market is not
nutritionally inferior to all-
meat hamburg.
Food Advisory Services,
Agriculture Canada, reminds
us to check the label carefully
when buying soyaburger to be
sure there is no misunderstan-
ding of what is being pur-
chased. The 70 percent ham-
burg and 30 percent hydrated
soya protein should retail at
about 20,-tents per pound less
than ordinary hamburg,
The total fat 'content of this
mixture is reduced and it
shrinks somewhat less in
cooking because the soya etten-
der absorbs sortie of the inetit
juices.
