Any way you shape it, minced beef can be transformed
into dozens of interesting dishes. The home economists
suggest that you tempt your family or guests with their
"Beef Pastry Roll". Minced beef, combined with a variety
of vegetables and spices is shaped into a roll and then
wrapped in a tender crust,
Ideas for minced beef
The list of dishes which can
be prepared with minced beef is
long and interesting. Whether
you use it to stretch the family
food budget or dress it up for
company, the results are
usually delicious.
Because the meat is ground,
such things as bread crumbs,
oatmeal or cereal flakes may be
added to it to make it go fur-
ther. Any number of herbs,
spices, sauces and vegetables
will add zest to minced beef.
The shape of the meat may also
be varied. You can form it into
meatballs, loaves or patties of
any size.
In order to have success with
your minced beef dishes, choose
and store the meat with care.
Minced beef may come from a
variety of beef cuts. If it is cut
from the shank, flank, neck or
from trimmings, it is called
"hamburg". According to Food
and Drug Regulations it must
not contain more than 30% fat
and if it is labelled "lean" it
must not contain more than
15% fat. Because fat will cook

minced beef usually provides
more servings per pound than
hamburger. "Minced chuck" or
"minced round" come from the
chuck or round respectively.
Minced beef is more
perishable than a whole cut of
beef - it dries out faster and
acquires an off-flavor on stan-
ding. Plan to use it within a
day or freeze it if you wish to
keep it for a period of two to
three months. To store fresh
ground beef, wrap it loosely in
waxed paper and refrigerate it
at once. For freezing, wrap the
meat tightly in moisture-vapor
proof material.
The home economists,
Agriculture Canada recom-
mend two tasty minced beef
recipes. "Meatball Casserole"
is a hearty meal by itself. The
"Beef Pastry Roll" is a flavor
ful meat roll wrapped in pastry.
Both are easy to prepare and
worthy of enthusiastic approval
of guests or family.
MEATBALL
CASSEROLE
Meatball mixture
11 /2 pounds minced beef
1 /3 cup finely chopped onions
3/4 cup cereal crumbs
1 beaten egg
2 teaspoons Worcestershire
sauce
1 teaspoon salt
1 /8 teaspoon pepper
1/2 cup tomato juice
Combine ingredients and
shape into 11 /2 inch meat balls.
Casserole
3 tablespoons flour
1 cup water
1 cup tomato juice
112 teaspoon salt
2 sliced carrots
2 onions, cut in rings
2 tablespoons chopped parsley
2 cups sliced mushrooms (1 /2
pound)
1 /4 teaspoon thyme
1 package refrigerator biscuits
or 8 unbaked biscuits
1 /4 cup milk
1/4 cup cereal crumbs
1 tablespoon sesame seeds
Combine flour and water and
add to tomato juice, Add this
mixture and • remaining
ingredients (except last 4) to
meat balls. Rake at 350°P until
vegetables are almost tender
(about 1 hour). Remove from
oven; top with biscuits which
have been dipped in milk and
rolled in combined crumbs and
Sesarne seeds. Increase heat to
376 °P and continue baking
about 16 minutes longer, 6 ser-

BEEF PASTRY ROLL
11 /2 pounds minced beef
3/4 cup quick-cooking oats
1 /3 cup chopped onion
1 /1 cup diced celery
1 /4 cup shredded carrot
2 tablespoons chopped parsley
1 /2 teaspoon oregano
1 teaspoon curry powder
11 /2 teaspoons salt
1 /8 teaspoon pepper
1 egg, beaten
1 /4 cup` chili sauce
1 /2 cup tomato juice
Pastry for 2-crust pie
Mix meat, oats, vegetables
and seasonings. Combine egg,
chili sauce and tomato juice.
Add to meat and mix
thoroughly. Shape mixture into
a roll 9-inch long.
Roll pastry out to a rectangle
about 14 x 12 inches. Place
meat roll in center and fold
pastry over, Seal edge, leaving
ends open. Place seam side
down on shallow baking pan.
Bake in a 450°F oven for 10
minutes. Reduce heat to 350°F
and continue ..lbaking
golden brown, about 50
minutes more. 6 servings.

MUSHROOMS
Whether you have gourmet
tastes or enjoy simpler foods,
mushrooms are sure to evoke a
pleasurable response. Who does,
not delight in eating a broiled
steak smothered with
mushrooms sauteed in butter
or who can resist the glorious
richness of creamed
mushrooms.
Ignored for a long time,
mushrooms are increasing in
popularity and today you will
find them on many tables
prepared in a variety of ways.
Mushrooms have a high
moisture content and contain
riboflavin, niacine, phosphorus
and some iron. One pound of
this delicious vegetalbe has
only 123 calories.
Here are a few hints for
preparing mushrooms. First of
all- buy only absolutely fresh
ones and clean them with a
damp cloth or by brushing or
scraping them gently. Avoid
washing mushrooms as they ab-
sorb a great deal of water. The
smaller mushrooms may he
cooked whole but you should
cut larger ones into uniform
slices,
If you season the mushrooms
before cooking do it with
discretion as once they are
cooked they loose a great deal
of moisture and decrease in
volume. Thus, if you are not
careful, the mushrooms may be
too salty. Mushrooms which
are cooked too long will be rub-
bery. A good rule to remember
is to cook them at a high tem-
perature until they dance in the
pan. The size of pan you use is
important. Choose a small pan
and fill it to the brim rather
than using a larger pan. This
will help to prevent the
mushrooms from drying out,
MUSHROOM TARTS
1 pound fresh mushrooms,
chopped
2 tablespoons minced onion
1 /4 op butter
1 /2 teaspoon salt
1 /8 teaspoon pepper
3 tablespoons chili sauce
2 teaspoons chopped fresh par-
sley
12. baked tart shells
Saute mushrooms and onion
in butter until onion is tram,
sparerit, Season and add chili
sauce and parsley. Cook until
mushrooms are tender (about 6
minutes), PHI tart shells, serve
warm, May be served with ham
