ROAST BEEF ROTISSERIE
• Sprinkle your roast of beef
with salt and freshly ground
pepper.
• Your roast should be long and
narrow to keep cooking time
to a minimum.
• If it is a large party, have one
roast cooking while carving
another.
• Follow cooking instructions as
given by appliance manu-
facturer.
MUSTARD SAUCE
2 onions, finely chopped
2 tablespoons cooking oil
1 tablespoon butter
1/4 lb. mushroom stems (leftover
from Marinated Mushroom
recipe), sliced
2 carrots diced
2 garlic cloves, finely chopped
4 anchovy fillets' (optional)
1/4 teaspoon hot pepper
2 tablespoons prepared
mustard
1/2 teaspoon powdered ginger
6 tablespoons flour
1 tablespoon dry mustard
4 cups beef broth
1 cup dry red wine
2 tablespoons tomato puree
When the weather outside is
frightful by the fire it's so
delightful. Particularly if there's
a beautiful bowl of chowder and
some crusty bread to come home
to.
An alternate recipe for a cold,
blustery day is Italian Style
Salmon Bake - colourful-
looking, tasty and equally
nourishing.
We think these recipes are
two sure-fire wintertime
winners.
B.C. SALMON CHOWDER
2 cans (73/4 oz. each) or 1 can
(151 /2 oz.) B.C. Salmon
11 /2 cups diced potatoes (2
medium potatoes)
1 cup canned tomatoes
1 medium-sized onion, sliced
1 /4 cup finely diced celery
1 /2 teaspoon celery seed
(optional)
2 cups boiling water
3 tablespoons butter
3 tablespoons flour
3 cups milk
2 teaspoons salt
1 /4 teaspoon pepper
Place diced potatoes,
tomatoes, onion, celery, celery
seed and boiling water in a
large heavy saucepan. Bring to
boiling point; reduce heat and
simmer about 15 minutes or
until the potatoes are nearly
fork tender. Add salmon
(including liquid) and continue
to simmer for about 5 to 10
minutes longer.
Make white sauce of the
butter, flour and milk; add to
the salmon mixture and gently
heat through; add salt and
pepper. (Do not allow to boil),
Garnish each serving with a
few slices of hard-cooked egg
topped with either chopped
parsley or chives. Makes
approximately 6 hearty,
generous servings.
ITALIAN STYLE SALMON
BAKE
2 cans (73/4 ox. each) or 1 can
(151 /2 oz.) B.C. Salmon
1 /4 cup chopped onion
1 /3 cup chopped green pepper
2 tablespoons butter
1 can (6 oz.) tomato paste
1/4 'cup water
• Sauté onions in oil and butter
until golden.
• Add next 7 ingredients, stir 1
minute.
• Blend in flour and mustard,
gradually add remaining In-
gredients.
• Serve in a chafing dish with
roast beef.
MARINATED MUSHROOMS
Prepare Marinade:
2/3 cup olive and salad oil
1/3 cup wine or tarragon vinegar
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon each fresh
minced parsley and dill
1 finely chopped green onion
1 finely chopped garlic clove
Immerse 1 pound. mushroom
caps only in marinade — store
covered. Refrigerate if not using
within 24 hours. Use small white
mushrooms.
HERRING CHRISTINE
Use canned herring bits in wine
sauce.
Dice 2 onions, 3 celery stalks
and 1 sweet red pepper and
blend with herring; sprinkle with
lemon juice — cover and re-
frigerate 2-3 days.
1 /2 teaspoon basil
3 cups large curd cottage cheese
2 eggs, beaten
2 teaspoons salt
1 /2 teaspoon pepper
2 tablespoons chopped parsley
1 /2 cup grated Parmesan cheese
4 to 6 oz. Mozzarella cheese,
sliced thinly
6 oz. lasagne noodles, cooked
until tender
Cook onion and green pepper
in butter until tender. Add
tomato paste, water, salt,
pepper, basil and salmon; stir
until blended.
Combine cottage cheese, eggs,
salt, pepper, chopped parsley
and Parmesan cheese, Place
half the noodles in 13 x 9 x 2-
inch baking dish; spread half
the cottage cheese mixture over,
add half the Mozzarella cheese
and half the salmon mixture.
Repeat the layers. Bake,
uncovered, in a 375 degree F.
oven for 30 minutes, or until
bubbly. Let stand 10 to 15
minutes before cutting in
squares. Makes 8 to 10 servings.
Tasty snacks
Raisin flake
cookies
1 cup unsifted all-purpose flour
11 /2 teaspoons double-acting
baking powder
1 /2 teaspoon salt
1 /2 cup shortening
1 cup sugar*
1 egg, well beaten
2 tablespoons milk*
1 teaspoon vanilla
2 cups bran flakes
112 cup raisins
4' Or use honey and omit the
milk.
Mix flour with baking powder
and salt. Cream butter.
Gradually blend in sugar,
creaming thoroughly after each
audition. Add egg; beat well.
Alternately add flour mixture
with milk, beating after each
addition. Add vanilla and
cereal; mix well. Drop dough by
teaspoonfuls onto greased
baking sheets, Bake at 375°F.
for about 10 to 12 minutes, or
until lightly browned. Makes
about 4 dozen cookies. •
