The favorite suspense thriller opens Wednesday and plays through Sunday evenings at 9 with shows on Saturday at 6 and 9. The Playhouse, which has been attracting steadily increasing audiences, will observe its official grand opening this week. Brief ceremonies, to be hosted by distinguished personalties, will be held after each performance. Playing in this production are Christopher Golding as Tony, the ex-tennis champ who plots the perfect nmrder; Nancy Gufstayson plays his wife who upsets the perfect murder; Shawn Lawrence plays Lesgate, the murderer who is murdered; David Alexander plays Max, the writer of murder stories, and Keith Mills plays Inspector Hubbard who solves all murders — in the nick of time. The all time favorite suspense drama offers exciting entertainment for the entire family. Reservations may be arranged by phoning the Playhouse at 238-8387. Tickets are a bargain at $3.00 too, There are discount prices for students, Cool corn While dimples may be attractive on a beautiful young girl they are a sure sign of old age on a kernel of corn. Plump kernels mean juicy, sweet, tender corn. Sweet corn has an extremely short shelf life. To maintain its freshness, corn must be chilled immediately after picking, held under refrigerated conditions and used within 1 to 2 days, say food specialists of the Ontario Food Council, Ministry of Agriculture and Food. Most sweet corn is hydro- cooled. In other words, the corn is plunged into an iced water bath immediately after picking and held there for at least one hour. This lowers the internal temperature of the cob from approximately 85°. Without hydro-cooling the corn continues to respire and the sugars, responsible for its sweet juicy,, flavor, are quickly changed into starch. Although hydro-cooling helps to preserve freshness, sweet corn should always be kept under refrigerated conditions and used as soon as possible. Winter menus, which used to include mostly root vegetables and dried legumes, now take on new light with fruits and vegetables that have come fresh from the garden, via the freezer. If you have facilities for storing frozen foods, the home economists with Agriculture Canada, Ottawa recommend that you take advantage of the abundant seasonal Produce available at the market and in home gardens, and freeze them for later use. WHICH VEGETABLES CAN BE FROZEN? Most vegetables freeze well; the exception are those that are usually eaten raw, such as radishes, celery, lettuce and cucumbers. They loose their crispness on freezing. Freezing will not improve the quality of a vegetable so select produce that is at the ideal stage of maturity for good eating. If space is limited, freeze beans, peas and corn. For greater variety, include some of the autumn vegetables, like cauliflower, Brussels sprouts and broccoli. BLANCHING AND CHILLING The secret is preserving that fresh vegetable flavor is blanching. If the enzymes were not destroyed, they would cause undesirable changes in the flavor, color and texture of the vegetables after freezing. Only small quantities of vegetables should be blanched at one time. The water should be boiling vigorously before the vegetables are added, and this precooking should be timed carefully, so the vegetables are not overcooked. Just as important as blanching, is the chilling of the produce. The vegetables should be plunged into ice water or under cold running water after blanching, and left there until cold. Then they should be drained well before packaging, otherwise ice crystals will form on the vegetables during freezing. PACKAGING AND FREEZING Packing materials for frozen foods should be moisture-vapor-proof. Otherwise, if not well-protected, the foods will dry out rapidly in the low humidity and temperature of the freezer. Plastic bags that are advertised especially for freezing, plastic or heavy-waxed cardboard containers are all suitable for vegetables. The packages should be labelled as to date of freezing and kind of vegetable. Foods should be frozen as quickly as possible at 0°F or lower, and if stored at 0°F, they "The art of riding is a beautiful appreciation of the finer things of life", says Mr. Koch, "when mounted, the good rider becomes one with his horse — one unit, like a monument". A few additional vegetables that have been recently tested by the home economists are listedin the following They recommend that the frozen tomatoes be used in soups, sauces or stews. Beets — Select only young beets that are firm, smooth and free from cracks or blemishes, Leave root ends on beets; cut off tops leaving 1 inch of stem, Wash beets. Cook in boiling water until tender. Cool quickly. Peel and slice or dice. Pack in freezer containers. Thaw and reheat to serve. Cabbage — Select firm heads. Wash, remove coarse, wilted or spotted leaves and core. Cut in serving-size wedges or shred coarsely. Blanch wedges 2 minutes, shredded 1 minute. Chill quickly. Drain thoroughly. Pack dry. To serve wedges, thaw 20 to 30 minutes to separate; cook 9 to 10 minutes. Shredded cabbage, thaw 2 hours to smeipnaurtaetse. and cook 4 to 5 Mushrooms — Select fairly clean mushrooms that are smooth and quite firm with caps not fully opened. Wash and slice. Saute each 2 cups mushrooms in 1 1/2 tablespoons butter 2 minutes. Drain. Pack in freezer containers. Reheat to serve. Tomatoes — Select plump, firm tomatoes having a uniform red color with smooth skin and no evidence of damage or soft spots. Peel tomatoes by dipping in boiling water and gently slipping off skin. Cut in quarters. Add 1 teaspoon salt, dash pepper and 3/4 teaspoon sugar to 2 pounds tomatoes and cook gently until tomatoes are tender (5 to 6 minutes). Pack in freezer containers.
