Phillip Andrewes is a 31-year old graduate of the Ontario Agricultural College (1965), who operates the family farm in the Niagara fruit growing area, producing a wide range of fresh fruits and greenhouse vegetables. His interest in organized marketing of farm products is" best demonstrated by his active role in local and commodity organizations, He has been a member of the executive of his local of the Niagara Fruit and Vegetable Growers Association; a member of the Fresh Fruit Growers Marketing Board for two years, and he has acted as chairman, Tender Fruit Section of the Ontario Fruit and Vegetable Growers Association. In commenting, on this appointment, Honourable William A. Stewart, Minister of Agriculture and Food said, "We are extremely fortunate to have a grower like Phillip Andrewes willing to accept this responsibility. His family background, his formal education and his experience combine to make him a valuable addition to the Board. Furthermore, at 31 years of age, he is one of the younger men in the industry and he will bring with him the enthusiasm and the aggressiveness of his generation. He will have a real challenge following in the footsteps of Don Paxton who has been a dedicated spokesman for the industry. Despite the mosquitoes and other bothersome insects, patio suppers seem to be very popular this year. The meal may center around a barbecue, cold meat or hearty salads, but there is one item that is always included — fresh salad vegetables. For patio meals, try serving an attractive salad vegetable platter as an accompaniment. Prepare crisp relishes with radishes, carrots, cucumbers, green pepper, ahead of time, and it will take just a few minutes to arrange an attractive salad platter. Then, each person can make his own salad by choosing from the variety of salad ingredients offered. Pass sour cream as dip or grated cheese as topping for the vegetables. For an attractive salad tray, the home economists, Agriculture Canada, Ottawa, suggest the vegetables be prepared simply with a few cut into fancy shapes as garnishes. All the relishes can be prepared ahead of time. They may need crisping in cold water for a short while. Then they should be kept in the refrigerator in a plastic bag or covered container with paper towelling inserted to absorb excess moisture. Attractive garnishes for a salad platter are: Carrot Curls — Cut long, paper-thin slices of carrot using a vegetable peeler. Roll each slice around your finger and fasten with a toothpick. Chill in ice water. Remove toothpicks just before serving. Celery Bundles — Cut 3-inch, narrow celery sticks and draw two or three of them through a carrot ring. Chill in ice water. Cucumber Accordians — Cut young cucumbers in halves and in sections 2 to 4 inches long. Cut thin crosswise slices about three-quarters of the way through the cucumbers, Insert thin radish slices in slits. Fluted Cucumbers — Score whole surface of unpeeled cucumber by running tines of fork lengthwise down cucumber. Cut in thin crosswise or diagonal slices. Radish roses — Make four or five thin petals by cutting the red peel from tip down almost to stem; leave a bit of red between the petals. For two rows of petals, cut one set from the middle down, the other from the tip to the middle. unless we can get some club administration, and that's in the form of an executive." The new name decided on for the 1972-73 club is Huron Harriers Track and Field Club. The club executive will be Robert Gibb, president, Clinton; Mike Conaboy, vice-president, Brussels; Mrs. K, Keller, secretary, Goderich; and Mrs. D. Flowers, treasurer, Clinton. The region will be divided into three towns: Goderich, Clinton, and Brussels, with a committee from each, This way towns joining later on can do so with no problem. The president and secretary, of the executive will act as the co-ordinators, informing the different Mike Conaboy, executive vice- president; Keith Raymond, coach; and Ted Elliot, Legion representative.. Only a very small percentage of the Canadian pea and bean crops are consumed fresh, most are grown especially for canning or freezing, Fresh peas are a treat, even though they require that little extra preparation, shelling. When buying peas at the market, choose bright green pods, that are crisp and well- filled, but not bulging. Bulging pods indicate peas are overmature and so will be tough and starchy. For best flavour and maximum food value, buy only enough peas for immediate use. Three pounds of peas in the pod yield about one pound or three cups shelled, which is enough for six servings. Peas should be shelled just before use. Green and yellow wax beans are also known as "snap beans", "butter beans" or "sting beans". By any name, they are certainly delicious, At the market, choose crisp, clean, fairly straight beans, that are free from blemishes. The pods should be uniform in size with well-formed seeds. Overmature beans have enlarged seeds and they may be tough, woody and stringy. Beans are not quite as perishable as fresh peas. They will keep fresh in a plastic bag in the refrigerator for a few days. Wash and prepare them just before using, One and one- half pounds of beans will serve approximately six. Although fresh peas and beans are good served plain with butter, salt and pepper you may find a few simple additions, such as herbs, heighten that fresh flavour even more. The home economists, Agriculture Canada, Ottawa suggest adding one of the following to the peas or beans at the beginning of cooking: 314 cup sliced celery, 2 to 3 tablespoons chopped onion or fresh chives, 2 or 3 bay leaves, The bay leaves should be removed before serving.
