use fresh meats or fish on the

outdoors. People do get hungrier
so more food is needed. Plan
about one-third more than usual.

often overlook our trees and

will be available at roadside
markets and retail stores.
Whether you savor the goodness
of fresh corn immediately or
freeze it for future enjoyment, its
juiciness, tenderness and sweet
flavor will be lost unless it is
handled properly. Corn begins to
lose flavor within a couple of days
after harvesting, particularly if it
is held in a warm place. Food
specialists at the Ontario Food
Council, Ontario Ministry of
Agriculture and Food,
recommend that when you buy
corn from a roadside stand make
sure the corn feels cool and is
kept away from the sun. In the
supermarket, look for corn which
is stored oh ice or in a
"refrigerated display case. High-
quality corn should have green,
especially lightweight, portable
utensils when planning menus.
Casserole dishes are easy to
make and use only one utensil.
How much counter space will
there be'? A folding lightweight
table adds useful square footage
for food preparation.
Assemble everything before
packing. If food and utensils are
packed so they can be removed
first then the cook can get a meal
ready in short order while others
set up camp.

A dinner, easy-to-prepare in
trailer kitchen or boat galley
includes tangy mushrooms.
shrimp jambolaya. tomato and
zucchini toss. whole green beans
and for dessert, fruit, fresh or
canned. In less than forty minutes
the meal will be ready to place on
the table set with attractive
plastic hostess ware.
TANGY MUSHROOMS
1 - 10 ounce can whole
mushrooms. drained
1 4 cup French or Italian dressing
Chopped parsley. fresh or dried
In small bowl or plastic container
toss mushrooms with dressing
and parsley.
Allow to marinate at least 112
hour. Serve as an appetizer or as
an extra with the main course.

SHRIMP JAMBOLAYA
2 tablespoons butter or oil
'2 cup chopped green pepper
1 2 cup chopped onion
1 teaspoon Worcestershire sauce
teaspoon garlic salt
2 teaspoon black pepper
2 cups hot water
3/4 cup uncooked long grain rice
2 ounce cans shrimp
In skillet saute green pepper and
onion in oil 2 - 3 minutes over low
heat. Add seasonings and water.
Simmer 5 minutes. Add rice.
Cover and cook over loW heat 30
minutes, Fluff rice. Add shrimp.
Lightly stir to distribute evenly.
Heat through 5 minutes.
Makes 4 - 6 servings.

corn quickly in cold water. drain,
package in plastic freezer bags,
and freeze immediately. Corn on
the cob should keep well for at
least 10 months at 0 degrees.
Allow frozen corn to thaw
completely before cooking. Cook
in boiling salted water for 8 to 5
minutes, depending on the
diameter of the cob.
