pure Utopia for busy working
people and the nicest, way we can
think of to treat that next dose of
spring fever. Why? It's hard to
pinpoint exactly the particular
appeal of a successful brunch but
many possibilities spring
immediately to mind.
It's a taste of the
forbidden...during the rest of the
week it's almost sinful to take
time for that last piece of buttered
toast, now you can have as many
as you like-no problem! It's
breaking out and doing your own
thing. ..you don't have to follow the
accepted breakfast pattern, in
fact it's more fun if you don't,
Serve dishes you wouldn't
normally dreain of suggesting for
breakfast. It's a touch of the
exotic.. ,time to try a new gourmet
recipe you have tucked away, or to
splurge a little on some favorite
food you've been craving. It's
reallienjoyini .tlie company of
good friends...knowing you don't
have to rush off to the theatre
afterwards, It's a change from
your regular lifestyle! Here's
what we mean, illustrated in a
menu. First impressions are
important,
A novel way to start is with
fresh fruit kabobs...thread plump
juicy strawberries, pineapple
tidbits, banana slices and melon
balls on long bamboo skewers.
Then stab them into a grapefruit
half for a handy holder on the
buffet table. With them, goes a
quick whipped cream dip, lightly
sweetened whipped cream
flavored with nutmeg, or a little
kirsch if you want to be more
exotic, Tastes sensational-a

For the main dish, try Swiss
Mushroom Quiche, a favorite with
the Home Economists in the Dairy
'Foods Service Bureau who sent us
the recipe recently. It's one of the
few classic recipes of French
origin that is easy to prepare and
when you make it with Canadian-
made Swiss cheese you just can't
go wrong. Because the filling is
basically a custard mixture, and
Casual and fun-a sunny spring brunch! On the menu-fruit
kabobs, Swiss Mushroom Quiche and Cheery Cherry Breakfast

soak into the very best pastry-
set the pie on a preheated cookie
sheet while it's baking. The extra
heat from the cookie sheet will
ensure a well-cooked bottom
crust. Sliced tomatoes or fresh
asparagus spears are good
accompaniments, but not really
necessary, since this Quiche is
good enough to stand on its own.
To finish up with, and. to nibble
on while you chat, what else but
hot sticky buns, warm from the
oven. Start with packaged biscuit
mix, add cherries, brown sugar,
cinnamon, pecans and butter, and
in minutes you have them ready
for the oven. Like all homemade
buns, they should be served warm
with lots of butter.
And a beverage suggestion-
cup after cup of coffee can be just
too much at a leisurely meal like
this. Start with the refreshment of
icy cold milk, it's worth a lot at
any meal. Serve it in tall crystal
glasses or 'pretty goblets, Then
follow later with that cup of coffee
and linger as long as you like,
SWISS MUSHROOM QUICHE
(Makes 6 Servings)
1 unbaked 9-inch pie shell
1 1 /2 cups shredded Canadian
made natural Swiss cheese
1 (10-ounce) can sliced
mushrooms, well drained
2 tablespoons finely-chopped
onion
3 eggs
1 tablespoon flour
v-Vrteaspoon-saat•
few grains pepper
few grains cayenne pepper
1/2 pint (11/4 cups) light cream
paprika
Preheat oven to 425 F. Prick
pie shell well. Partially bake in
preheated oven 5 to '7 minutes.
Reduce oven temperature to 325
F. Meanwhile combine cheese,
mushrooms and onion. Beat eggs
slightly; beat in flour, salt,
pepper and cayenne pepper. Stir
in cream and cheese mixture.
Pour into partially baked shell
and sprinkle lightly with paprika.
Bake in preheated oven 40 to 45
minutes or until a knife inserted
in center comes out clean. Serve
hot,

(Makes 1 Dozen)
1/4 cup butter, ,melted
1/4 cup coarsely-chopped
pecans
1/4 cup maraschino cherries,
quartered
3 tablespoons lightly-packed
brown sugar
1/4 teaspoon cinnamon
2 cups packaged biscuit mix
2 tablespoons granulated sugar
2.3 cup milk
1 egg, well beaten
Preheat oven to 325 F. Grease
twelve 2 1 /2 -inch muffin cups
lightly. Combine 2 tablespoons

brown sugar and cinnamon. Spoon
mixture into muffin cups.
Measure biscuit mix' into a bowl;
mix in granulated sugar. Stir milk
into beaten egg. Make a well in dry
ingredients and add liquid all at
once. Mix lightly until just
combined. Two-thirds fill
prepared muffin cups. Brush with
remaining butter. Bake in
preheated oven 30 to 35 minutes.
Invert pan on wire racks to cool 5
minutes, remove pan, Serve
warm with butter.
