The following business took place, This year it was decided to contribute the same as in 1971 to the Clinton Spring Show. The next meeting to be on April 5 with a speaker from the Agricultural Office, On March 10 at 8:30 in Londesboro Hall a social evening will be held in the form of a card party, A discussion period followed on who should vote for farm policies. It was felt by the group present that it should remain at a 66 and two-thirds percent majority, The vote should be on a graduated percentage of what you produce but that a producer should not have 10 votes as the maximum. You should produce the commodity for two years before voting. To qualify as A farmer a certain percentage of your income must come from the farm. The following resolution was presented: "Since the Federal Government has increased the funds for Labour Assistance from $69,000,000 to $85,000,000 for 7,900 jobs, be it resolved that they also include farm labourers in this program," Eric Anderson showed slides on his western beef tour. They were enjoyed by all present. Clinton II 4-H Club meets The first meeting of Clinton II 4-H Homemaking Club was held at the home of Mrs, Clayton Ellis. The leaders are Mrs. Ellis and Mrs. Jenkins. Let stand 10 minutes. Combine next six ingredients and cool to lukewarm. Stir in,yeast mixture, Gradually beat in two cups flour until dough is smooth and elastic, Add remaining flour to make soft dough. Turn onto floured board and knead 10 minutes. Shape into ball and place in greased bowl. Brush with melted fat. Cover and let rise in warm place (about 85 F) until double in bulk (1 1 2 hours). Punch down and roll to 1.2-inch thickness. Cut 3-inch doughnuts and allow to rise until double in hulk (about 1 1 2 hours). Fry in deep fat at 375 F until browned turning once. Makes about 1 1 2 dozen, Home-made doughnuts are a treat whenever they are made, And only with home-made doughnuts do you get those delicious centers or -holes". The first doughnuts were simply deep-fried small cakes. Then the custom developed of punching out the hole before cooking because there was a problem of the cakes not being cooked through to the centre, The "hole" was cooked separately and became a favorite as well. There are two basic types of doughnuts you can make at home. One, the cake-type, is leavened with baking powder, the other is a yeast-leavened doughnut. Both are cooked the same way in deep fat. One needs to be just a little cautious when deep fat frying. You should use a fairly large heavy kettle but there is no need to buy a deep fat fryer. The kettle should be filled not more than half-way with the fat or oil, Heat the fat gradually to 375 F on a thermometer or test the temperature with a cube of bread which should brown in about 60 seconds, Be sure the fat has reached this temperature before you add the first doughnut. Greasy doughnuts will result if the fat is not hot enough at the start to form a crust on the outside. If the fat is smoking, it means that the temperature is too high and the fat is starting to break down. Any doughnuts put in at this time, will be overbrowned before being cooked through. After frying one batch, always let the temperature came up again to the required heat before adding another one. If you try to fry too many at onetime, this causes the temperature of the fat to be considerably lowered. and may result in the fat bubbling up .too fast and overflowing the kettle. Any shortening or oil may be used in deep fat frying doughnuts. After use, the fat may be cooled, then strained and stored covered in a cool place for use another time. It is wise not to reuse that fat too many times becauSe after awhile it does start to break down arid smoke. The home economists with Canada Agriculture, Ottawa have two basic doughnut recipes for you to try. The cake-type doughnut may be sugared or iced before serving and the yeast-type may be stuffed with jam or jelly. DOUGHNUTS-CAKE TYPE 3 tablespoons butter 1 cup sugar 1 teaspoon vanilla 2 eggs 3 cups sifted all-purpose flour 4 teaspoons baking powder 1/2 teaspoon salt teaspoon nutmeg or mace 2-3 cup milk Cream butter and sugar and add vanilla. Beat in eggs one at a a time. Sift dry ingredients and add alternately with milk to creamed mixture. Chill dough about 30 minutes. Turn onto floured board and knead for 30 seconds. Roll dough 1 :2 -inch thick and -cot 3-inch doughnuts. Fry in deep fat at 3'75 F until browned, turning once. Make 1 1.2 dozen. Starting geraniums Now is the time to start thinking about plants for your garden this spring, says R. W. Crawford, extension horticultural ist, Onto rio Department of Agriculture and Food. One of the most popular garden plants is the geranium. You can start to take cuttings now and enlarge your supply of flowers for May and June. Cuttings should be two to four inches long, and at least as thick as a pencil. Some people simply put the geranium cuttings into water and let them root this way, says Mr. Crawford. However, they can also be put into a pot of sand which is kept moist. One way of ensuring sufficient moisture is to put the pot of cuttings into a large plastic bag to prevent moisture loss, Depending on conditions, rooting may take three or four weeks. Remember that there is a limited food supply in. the cutting. They cannot grow indefinitely in water or sand. When there is a good root system on the cutting, transplant it into a small pot of well-drained. soil. Good light and moisture levels will help ensure a good healthy plant for your garden in May,
