The feeling fits Huron County well though, and matches the messages of the meal - enjoying what the unique agricultural community of Huron County has right outside the door or down the road. Situated in the rustic Benmiller Inn’s Ivey Dining room, the dinner made of all locally available produce started with a Summer Peach Gazpacho that included a garnish of house-cured beef pemmican. The main dish was a maple-smoked prime rib roast with pink peppercorn, Benmiller garden green bean panzanella, and a blueberry gastrique. Dessert was a miniature maple crème brûlée with sun dried blueberry biscotti and grilled peach sorbet. With food from three local farms - Schilbe’s Farm, a maple syrup operation near Bayfield; Cedar Villa Angus Farms, a beef farm near Zurich and Bayfield Berry Farm, a fruit farm and business near Bayfield - chefs at the Benmiller Inn, under the direction of Executive Chef Spencer J. Vail created thethree course meal. Taste of Huron Executive member Joan Brady took the stage to introduce the dinner, and then explained why the theme of thank a farmer was chosen, and spoke about the problems facing farmers. Brady explained that, in the past 60 years, the prices charged for products from farms has increased exponentially, jumping more than 600 per cent, but the amount of money the farmer sees has remained the same at best, and has more recently started a downward spiral. This “Farm Crisis,” according to Brady, has created an environment where farms can’t grow. Farm income is dropping every year, Brady said, with the last processed figures showing farms averaged an income of $12,098 in 2006, and just over a quarter of that the next year - earning an average of only $3,304 in 2007. “The numbers indicate that 2010 will be the worst year yet,” she said. Brady also stated that there is a drain on younger farmers, and that this lack of fresh blood will only serve to continue to make matters worse. “We don’t have many [farmers under the age of 35],” she said. “Ontario lost 63 per cent of its young farmers last year.” This loss is mirrored in the number of startup farms beingcreated, according to Brady, with Ontario losing 61,000 farms between 2000 and 2006, and having only 43,000 open in that same time period. Brady tied the presentation to the meal, and the other presenters that night, by stating that farmers need to start regaining the value of their goods in the marketplace. “Farmers need to start selling directly to their customers,” she said. “They need to maintain a bigger percentage of the sale.” Brady added that this also benefits the customers, giving them the assurance of local food, and the story behind the creation of the food. Rick Schilbe spoke before the appetizer, and gave a brief overview of maple syrup including history from when European settlers first settled in North America, the method by which it’s done, current practices, and criticisms of current practices. Schilbe started his presentation by stating that Huron County is part of a unique area for maple syrup production - the western fringe of the production area. “Production goes east from here into Quebec,” she said.
