parts, dust with flour and
seasonings, brown in hot fat, add
2 cups of liquid, cover and
simmer for 11/2 to 2 hours. For
family meals use tomato juice
seasoned with bay leaf, oregano
or rosemary and served with
Parmesan noodles. For an
oriental flavor use part orange
juice, part water seasoned with
soya sauce or ginger as the
liquid, and serve with fried rice.
For an elegant company dish,
use white or red wine with
mushrooms added, served on a
rice pilaf.

Dressing the fowl is
traditional at Christmas. For
many years recipes have
suggested the addition of
chopped cranberries, dried
apricots, raisins, apples or other
fruits to provide extra flavor.
Recently it has been found
that these fruits not only
improve the flavor of the '
dressing, but the keeping quality'

For a crispy brown skin, use
the broil-bake method. Brush
the turkey parts with butter
seasoned with salt, pepper and
paprika, then broil for 10 to 15
minutes on each side, 6 to 8
inches from the broiling unit.
Bake for 13/ to 2 hours in a 325
degree oven.
Braised turkey parts can make
Turkey parts offer the same
good turkey flavor as the whole
bird, but take less time to cook.
So why have turkey parts not
met with the same enthusiasm in
Canada as in the United States?
Could it be a result of the
Canadian tradition of stuffing
the turkey, while Americans
often cook the stuffing and the
bird separately? Whatever the
reason, busy cooks should take
ad vantage of the easy
preparation and faster cooking
of turkey parts.
To oven bake turkey parts,
dust them with flour and
seasonings, and brown in hot fat.
In a slow 325 degree oven the
quarters, legs or pieces will
require 2 to 21/2 hours. Serve
with stuffing that has been
baked separately in aluminum
foil or a covered casserole. Home
broth should not be added to
the breadcrumbs until it's time
to stuff the bird.
Ho me economists at the
Ontario Department of
Agriculture and Food stress the
importance of stuffing the bird
just before it is to be roasted. ,
After roasting remove' all
stuffing from the cavity, store
separately, and use within 3 or 4
days.
Don't overlook carrots
When planning Christmas
dinner don't overlook the carrot.
Carrots are flavorful, colorful,
and versatile. By varying the
shape of the slices or the method
of cooking, or by adding spices,
herbs, glazes or sauces, carrots
can be as festive and special a
vegetable as you could want.
Carrots can be cut into
lengthwise sticks, bias slices,
small cubes or long thin julienne
strips, or left whole.
For a different flavor, home
economists at the Ontario
Department of Agriculture and
Food suggest cooking carrots in
Peter is a most attractive boy, 16 months old, of Scottish
and Irish descent. He looks quite slight, but weighs 25
pounds, so he's a sturdy fellow. He has soft blonde hair with
a slight curl, huge blue eyes, fair skin, and the irresistible
smile of the picture.
Peter was born very, prematurely and had a lot of early
health difficulties. He has long since overcome them, except
for a tendency to colds, and seems to have made up for- his
prematurity.
In infancy, Peter was diagnosed as, having very mild
- cerebral palsy (which means loss oUmuiele 'control) in his
left leg. It is exceedingly slight — he moves easily and
naturally and is well co-ordinated. This is not a progressive
condition, so it will not be more troublesome in the future
than it is now.
Peter is a healthy, happy boy, active and really strong.
If someone- leaves a drawer open he chins himself on it. He
has quite a big vocabulary and he loves music.
He will be a fine son for a family wanting a handsome,
cheerful, affectionate little boy. To inquire about adopting

foods- When these .dips contain
such excellent protein foods as
hard-cooked egg, finely chopped
turkey or cheese they provide
real food value along with fun
and flavour. potato chips,
crackers or sticks of raw
vegetables may be used for
dipping.
These recipes are Provided by

Agriculture to help make
dipping time a satisfying one,
ZESTY EGG DIP
4 minced hard-cooked eggs
3 slices cooked bacon, crumbled
1 teaspoon minced onion
1 teaspoon Worcestershire sauce
1 teaspoon prepared mustard
% cup mayonnaise
1 tablespoon cream
Mix ingredients. Chill. Serve
with vegetables or crackers.
Makes about 11/2 cups
TURKEY DIP
1 cup finely chopped cooked
turkey
2 tablespoons chopped green
onion
2 tablespoons finely chopped
celery
1/2 clove garlic, crushed
1 tablespoon chopped pimiento
1/2 teaspoon curry powder
% teaspoon salt
1/4 cup grated cheddar cheese
3/4 cup dairy sour cream
1 teaspoon lemon juice
Conibine ingredients and
chill. Serve with potato chips or
crackers. Makes about 11/2 cups.
GARLIC CHEESE DIP
11 8-ounce package cream cheese,
softened
'A cup mayonnaise
Beat cheese until fluffy and
gradually beat in remaining
ingredients. Serve with chips or
crackers. Makes about 1 cum

a basic bread stuffing (4 cups of
bread crumbs), use one of the
following variations:
Apples, 2 cups apples,

Nut and Raisin, 1/2 cup
chopped walnuts and 1/4 cup
raisins; 2 cloves garlic, crushed Cranberry, 1 cup chopped
cranberries, 1/2 cup raisins, 1/4 1/4 cup chopped parsley
tsp cinnamon, 2 tsp grated 1/4 teaspoon salt
lemon rind, 4 tbsp ,sugar; ,omit,,;Dash peeper
onion and sage; '1/2 teaspoon WoMesOire
Apricot and Apples, 2 cups sauce.
