For special guests, add an appetizer, and corn muffins, and make the dessert a dramatic one. ORANGE-GLAZED SMOKED PORK SHOULDER 2 to 21/2 pound boneless smoked pork shoulder (cook-before- eating style) 1 cup orange juice 1/2 cup honey or corn syrup 1/2 cup sugar Vs teaspoon allspice 2 (28-ounce) cans sweet potatoes in syrup, drained Vz cup orange sections 1/3 cup raisins 1/4 cup butter or margarine Bake smoked pork shoulder ' in preheated 325 degree oven until done, about 40 minutes per pound or until roast meat thermometer reaches internal temperature of 170 degrees. With blender still running remove cover and add cream and ice cubes, one at a time. Continue to process at high speed until ice is melted. Allow mix- ture to stand for just one or two minutes until it begins to thicken. Turn into crumb crust and chill until firm. If desired, garnish with whipped cream. YIELD: 6 to 8 servings. Note: If blender container will not hold a volume of 41/2 cups, do not add cream to blender. Salmon I loaf French bread 4 tablespoons butter or margarine, melted 6 hard-cooked eggs, shelled and diced 1/4 cup chopped celery 2 tablespoons thinly sliced gherkins Pepper and salt to taste Salad dressing to moisten Flake salmon including juice, but remove skin and bones. Cut a thin slice lengthwise from top of French loaf. Cut out inside, leaving a boat-shaped shell about 1/4-inch thick, Brush shell and top with melted butter or margarine. sPlace on a cookie sheet. Toast at 375 degrees F. for 5 minutes. Combine eggs, celery, glIerkins and seasonings. Add salad dressing to moisten. Add salmon and mix lightly. Spoon into loaf. Replace top, Wrap loaf in foil. Heat over hot coals on barbecue or bake at 375 degrees F. for 30 minutes. Slice crosswise and serve. Arrange sweet potatoes in 101/2 quart casserole; top with orange sections and raisins. Add butter or margarine to remaining hot syrup; pour over sweet potatoes. Cover, Bake in 325 degree oven until well heated, 30 minutes. Uncover and bake 15 minutes longer, basting frequently. Serve with the orange glazed picnic ham. Makes 6 to 8 servings.
