Smoked pork shoulder, or
picnic ham, temptingly glazed
with a spicy orange sauce is
priced for family meals, yet it is
attractive enough for, special
guests.
If you are not acquainted
with smoked pork shoulder, you
have been missing some tasty
food. It is a shoulder cut which
has been carefully cured and
richly smoked so that it has a
distinctive ham flavour.
For a family meal, serve this
orange'glazed picnic with sweet
potatoes; buttered green beans
or broccoli, a crisp vegetable
salad and a simple dessert. For
special guests, add an appetizer,
and corn muffins, and make the
dessert a dramatic one.
ORANGE-GLAZED
SMOKED PORK SHOULDER
2 to 21/2 pound boneless smoked
pork shoulder (cook-before-
eating style)
1 cup orange juice
1/2 cup honey or corn syrup
1/2 cup sugar
Vs teaspoon allspice
2 (28-ounce) cans sweet
potatoes in syrup, drained
Vz cup orange sections
1/3 cup raisins
1/4 cup butter or margarine
Bake smoked pork shoulder
' in preheated 325 degree oven
until done, about 40 minutes per
pound or until roast meat
thermometer reaches internal
temperature of 170 degrees.
' Combine orange juice, honey or
corn syrup, sugar and allspice.
Bring to boil; boil 5 minutes.

1 tbsp. cornstarch
1 tbsp. soy sauce
3 tbsp. vinegar
2 Ontario hothouse tomatoes,
cut in wedges
Shake .chicken in flow and
spices. Brown in butter in
frypan. Cover and simmer until
tender. Drain excess fat. Add
onion and celery; cook until.
onion is transparent. Drain
peaches, Blend peach syrup,
cornstarch, soy" sauce, and
vinegar. Add to chicken and
cook until clear and thickened.
Add peaches and tomatoes. Heat
through. Serves six.

Grape
2 envelopes Knox Gelatine
xh cup cold grape juice
cup boiling grape juice
2 eggs
1,1 cup sugar
1/8 teaspoon salt
Cream Pie
I teaspoon lemon juice
1 cup heavy cream
I./ cups ice cubes
or crushed ice
I 9-inch graham cracker
crumb crust
Sprinkle gelatine over 1/2 cup cold grape juice in blender con-
tainer. Add boiling grape juice. Cover and process at low speed
until gelatine dissolves. Add eggs, sugar, salt and lemon juice.
Cover and process at high, speed until smooth. With blender still
running remove cover and add cream and ice cubes, one at a time.
Continue to process at high speed until ice is melted. Allow mix-
ture to stand for just one or two minutes until it begins to thicken.
Turn into crumb crust and chill until firm. If desired, garnish
with whipped cream. YIELD: 6 to 8 servings.
Note: If blender container will not hold a volume of 41/2 cups, do
not add cream to blender. Add ice cubes and then quickly pour
mixture into a WWI and stir the cream.

An inviting way to welcome
spring into family meals is with a
colourful, gay menu full of
Ontario products, says the
Ontario Food Council, Ontario
Department of.Agriculture and
Food. Canned peaches and fresh
hothouse tomatoes are . a
delicious cciMination with
chicken pieces; add to this a
cool, molded salad made from
fresh local cucumbers and baked
potatoes and what more could
the family ask for? Only a
scrumptious apple pie laced with
truly Ontario maple syrup!
Peachy Tomato Chicken
6 chicken pieces
1/2 cup flour
JUMBO EGG BOAT
2 cans (7-1/4 oz. each) B.C.
Salmon
I loaf French bread
4 tablespoons butter or
margarine, melted
6 hard-cooked eggs, shelled and
diced
1/4 cup chopped celery
2 tablespoons thinly sliced
gherkins
Pepper and salt to taste
Salad dressing to moisten
Flake salmon including juice,
but remove skin and bones. Cut
a thin slice lengthwise from top
of French loaf. Cut out inside,
leaving a boat-shaped shell about
1/4-inch thick, Brush shell and top
with melted butter or margarine.
sPlace on a cookie sheet. Toast at
375 degrees F. for 5 minutes.
Combine eggs, celery, glIerkins
and seasonings.
Add salad dressing to moisten.
Add salmon and mix lightly.
Spoon into loaf. Replace top,
Wrap loaf in foil. Heat over hot
coals on barbecue or bake at 375
degrees F. for 30 minutes. Slice
crosswise and serve. Makes 6
servings.

baste the meat during the last 30
minutes of cooking time.
Arrange sweet potatoes in
101/2 quart casserole; top with
orange sections and raisins. Add
butter or margarine to remaining
hot syrup; pour over sweet

degree oven until well heated,
30 minutes. Uncover and bake
15 minutes longer, basting
frequently. Serve with the
orange glazed picnic ham.
Makes 6 to 8 servings.

Sift the flour, salt, baking
powder, and sugar together in a
mixing bowl. .Fold in shredded
imported Holland Edam, coating
the- cheese with the flour
mixture. Add the unbeaten egg,
milk and melted fat; stir quickly
and lightly until mixed (do not
beat). Spoon into well-greased
muffin pans filling each cup
two-thirds full, Bake in hot oven„
(400 degrees F,) 20-30 minutes.
The smaller the muffin the
shorter the baking-time. Makes
16 medium muffins„
Food hints
If you want to cool a pudding
quickly, place the container in a
pan of cold, well-salted water.
Even for a strawberry desert
you need a bit of salt to make it
a bit sweeter.
