COTTAGE CHEESE DIP
14 slices bacon
1 lb. cottage cheese, sieved
% tsp. garlic powder
dash of cayenne
dash of pepper.
1 tsp. onion salt

apple-cheese combinations are

along these recipes to add to
your dessert recipe 'file. In the
Apple Cheese Cobbler grated
cheese is added to the dough
which tops the sliced apples.
Apple Cheese Loaf Cake is an
easy "make-ahead" dessert.
Gratcd raw apple, and lemon
juice are folded into beaten
cream cheese. This cheese
mixture is • placed between thin
crosswise slices of a loaf cake
then refrigerated overnight. Just
before serving the filled cake'
covered with whipped cream. •
APPLE CHEESE
COBBLER
6 medium apples (about 2
pounds)
1/4 cup brown sugar
1 tablespoon butter, melted
11/2 cups sifted all-purpose flour
2 teaspoons baking powder
% teaspoon salt
2 tablespoons butter
cup (3 ounces) grated cheddar
cheese
1 egg, beaten
6 tablespoons milk
% cup brown sugar
Once a light-coloured fruit,
such as an apple, is cut or
bruised, browning takes place.
Browning is caused by a reaction
between certain compounds in
these fruits and air. •
Several methods may, be used
to prevent or reduce browning:
Covering fruit with a liquid, or
packaging it in an airtight
container, helps to exclude air,
thereby delaying browning.
However, unless air is
Completely excluded, browning
will still take place. Therefore,
another method, such as dipping
the fruit in an acid like lemon or
pineapple juice, or using ascorbic
acid, a brine or sugar syrup, or
blanching is used. Again, none of
these methods alone will prevent
browning indefinitely.
If the fruit is to be used
quickly, for example, in a salad
or pie, lemon juice would 'be
so ffit ie to . prevent
discoloration. If the fruit is to be
kept for a longer period, as in
canning or freezing, two or more
of these methods are combined,
This is why apples are dipped
into a brine and peaches are
blanched before packing in a
sugar syrup, to which ascorbic
acid tablets are added, when
these fruits are prepared for
freezing. This also explains why
light-coloured fruit cannot be
successfully frozen in a dry sugar
2 tablespoons boiling water.
Peel,' core and slice apples.
Combine With 1/1 cup hroWn
sugar and melted butter, Arrange
in baking dish. Sift flour, baking
Powder and salt. Cut in butter
and add grated cheese. Combine
egg and milk, Add to dry
ingredients and mix quickly to a
soft dough, Pat dough out to fit
casserole and place over apples,
Bake at 425 deg. F for 15
minutes, Combine remaining %
cup sugar and water. Pour over
Partlyt? baked *dough. Continue
baking until apples are tender
and topping tests done (about
15 Minutes). Serve warm with
cream or ice cream. 6 servings.
LOAF CAKE
1 cup (1/2 pound) cream cheese
% cup sugar
teaspoon grated lemon rind
1 teaspoon lemon juice
3/4 cup grated raw apple
1 plain loaf cake (9 x 5 inches)
34 cup 'whipping cream, whipped
, 2 tablespoons chopped walnuts
Beat cream cheese until
fluffy. Gradually beat in sugar.
Add lemon rind, juice and grated
apple. Cut cake in thin crosswise
slices. Spread cheese mixture
between slices and reassemble
cake. Wrap and chill in
refrigerator overnight. Just
before serving ice cake with
whipped cream and sprinkle
with chopped walnuts. Slice
diagonally to serve. 6 servings.
Note:— If electric blender is
available, combine first four'
ingredients and blend until
'smooth. Add apple and blend
for five seconds.

meatballs on both sides in their
own fat; transfer to baking dish,
Combine ketchup, water, lemon
juice and basil; pour over
meatballs. Cover; bake at 350
deg. F for 11/2 hours, Serve over
hot, buttered noodles. Serves 6
to 8.
