One answer is to have several cans of salmon in the kitchen cupboard; there are many, convenient, appetite-appealing dishes you can make, and take just a.few minutes to do it. Two recipe suggestions might be: Salmon Supper Patties '(for one), and Salmon-Stuffed Tomato Salad. If you have the canned salmon on hand you're all set because you probably have all of the other ingredients, Besides being one of the original "convenience" foods, canned salmon comes "in three convenient sizes". The size especially convenient for "meals for one" is the 3-34 ounce can. (When you want to make great things for two—or more—the other two convenient sizes of canned salmon are 7-3/4 ounce and 15-1/2 ounce.) SALMON SUPPER PATTIES (for one person) I can (3-34 oz.) B.C. Salmon 1/2 cup instant potato flakes 3/8 cup boiling water I egg 1/2 teaspoon salt 1/4 teaspoon thyme 2 tablespoons corn flake crumbs Combine potato flakes with boiling water. Add flaked salmon, including jnice and bones which have been' mashed, and 'mix. Beat in egg, salt, and thyme, until well blended. Shape mixture into two patties. Dredge in corn flake crumbs. Place in buttered baking pan or casserole dish, Bake at 375 degrees F, for approximately 30 minutes, turning once; or fry lightly in butter or margarine_ until golden brown, turning often. Serve with favourite vegetable. Makes one serving. SALMON-STUFFED TOMATO SALAD (for one person) 1 can (3-3/4 oz.) B.C. Salmon 2 tablespoons salad dressing 2 teaspoons chili sauce 1 teaspoon instant onion 1 teaspoon lemon juice 1/4 teaspoon dillweed 1/4 teaspoon Worcestershire sauce few grains salt 2-3 drops Tabasco sauce 2 tomatoes Parsley sprigs Empty contents of can into small mixing bowl; flake salmon and mash bones. Blend salad dressing, chili sauce, onion, lemon juice, dillweed, Worcestershire sauce, salt and Tabasco. Fold into flaked salmon. Stem the tomatoes and cut a thin slice off the top. Hollow out to within 3/8" of surface. Stuff each tomato generously with salmon mixture. Chill. Garnish with parsley sprigs. Place lettuce leaf on salad plate to hold tomatoes; serve with favourite dressing and hot rolls. Makes one serving. The protest was made May 5 by Mrs. Susan Daglish, President of Allergy Information, in a telegram to the Honorable John P. Robarts, Prime Minister of Ontario. Mrs. Daglish said that these laws impose an unfair burden on Ontario citizens with allergy or dietary conditions. Allergy Information requested that the Prime Minister seriously consider the Institute of Edible Oil Foods proposal to remove these coloration restrictions. Turn into a medium casserole dish and bake at 350 degrees F for about 25 minutes or until a knife inserted slightly off-center comes out clean. Makes six servings. 8 slices cooked ham 8 slices imported Holland Gouda cooked asparagus spears On a slice of cooked ham place a slice of imported Holland Gouda and across one end 2-3 spears cooked asparagus. Roll up and place on buttered baking dish (about 12"x 7") or place rolls in individual buttered ramekins, 2 per ramekin. Sauce: 4 tablespoons Miff& r,o I small piece celery, minced 1 teaspoon minced onion 4 tablespoons all-purpose flour pinch nutmeg 2 cups milk 1 cup shredded imported Holland Edam or Gouda (4 oz.) Melt butter hi saucepan on medium heat. Cook onion and celery until tender. Thoroughly blend in flour and nutmeg. Gradually pour in milk stirring constantly with a wooden spoon or whisk until sauce thickens and comes to a boil. Remove from heat; fold in shredded imported Holland cheese. Stir with a whisk until cheese melts and sauce is smooth. Pour sauce over rolls. If desired garnish with buttered • bread crumbs or paprika. Place in a preheated 350 degrees F. oven for 20 minutes.
