A three-star menu from the

Department of Agriculture and
Food, features fresh Ontario
hothouse tomatoes and
cucumbers, served alone for full
enjoyment; canned Freestone
peaches; and an economical beef
cut which is tenderized in the
long, slow cooking process.
Adding fresh, frozen, or canned
vegetables to the main dish
packs the casserole with extra
flavor and nourishment, and
stretches the number of servings
possible.
Beef and Vegetable Casserole
4 strips bacon
2 lb round steak, cut V2 inch
thick
1/2 cup flour

3 eggs beaten
'A cup milk
1/8 teaspoon salt
1 teaspoon sugar
6 sliceS bread
Butter for frying
Blend together eggs, milk,
salt and sugar. Dip each bread
slice into egg mixtiire until well
coated, Fry in melted butter
over medium heat turning slice
over when browned. 6 servings.
To make Waffled French
Toast —add 2 tablespoons Melted
butter to the egg mixture before
dipping the bread. Cook in a
greased waffle iron until lightly
browned.
Latest statistics show an
increased enrolment of just
under 18,000 at Ontario's 20
colleges of applied arts and
technology.
Enrolment at the colleges has
jumped to 71,756, compared to
53,742 during the 1968-69
school year.
The take over of manpower
retraining programs by the
colleges is a major factor in
increasing full-time attendance
to 37,613. Full-time attendance
during 1968.69 was just over
25,000.
Of the full-time students,
24,742 are post-secondary, an
additional 10,594 are in

College in Ottawa is second with
4,094.

suggest, an. omelet or "quiche" as
the star attraction.
FLUFFY HAM OMELET
1/4 :teaspoon Salt
1/8 teaspoon pepper
1 cup commercial .sour prom
6 .egg yolks, beaten .
1 cup chopped cooked ham
6 egg whites, stiffly beaten
1 tablespoon butter
Beat salt, pepper and 1.4 cup
of the sour cream into egg yolks,
Add ham. Fold whites into yolk
mixture. Heat butter in a
10-inch frying pan until a drop
of water sizzles. Pour in omelet
and spread evenly. Cook slowly
until very lightly browned on
bottom (3 to 4 minutes). Place
in 350 deg. F oven and bake
until set (10 to 12 minutes).
Slide on to serving dish, spread
with remaining 1/2 cup sour
cream and garnish with sauteed
apple rings. Cut in wedges to
serve, 4 servings.
SAUTEED APPLE RINGS
2 tablespoons butter
1 tablespoon brown sugar
1/8 teaspoon cinnamon
3 red apples, cored and cut in
rings •
Melt butter, stir in brown
sugar and cinnamon. Add apples
and saute over medium heat
until tender (3 to 4 minutes each
side).
.CHINESE OMELETS
1 cup sliced onions
1/2 cup diced celery
3 tablespoons butter
2 cups sliced mushrooms
pound)
1 cup thin strips of cooked
chicken or turkey
1 cup bean sprouts, well drained
1 teaspoon salt

6 eggs, beaten
2 to 3 tablespoons butter
Saute onions and celery in
butter for about 4 minutes. Add
mushrooms and cook another 4
minutes. Cool, and, mix with
chicken and bean sprouts.
Add Salt, Pepper and
vegetable tni4tnre to eggS. Melt 2
tablespoons of butter in frying
pan. Drop in large spoonfuls of
egg mixture (g tablespoons for
each omelet). Cook over
medium heat about 1 Minute,
torn and cook 1 minute more.
Makes 16 omelets 3 per
person for lunch or 2 each as an
entree.
QUICHE PANApiENNE
baked 9-inch pie shell
6 strips fried crumbled bacon
VI cup grated old cheddar cheese
1 tableSpoon flour
3 eggs, beaten
1.4 cup light cream
1/2 teaspoon salt
dash pepper
2 tablespoons grated old cheddar
cheese
Sprinkle bacon in pie shell.
Mix .% cup cheese with flour and
sprinkle over bacon. Combine
eggs, cream and seasonings and
pour into pie shell and top with
remaining cheese. Bake at 350
deg. F until custard sets (30 to
35 minutes). 6 servings,
Quiche Tarts — Reduce
cheese in above recipe to 2/3
cup and custard mixture to 2
eggs, 1/2 cup cream and 1/8
teaspoon salt. Fill unbaked tart
shells and bake at 425 deg. F for
16 to 18 minutes. Makes 16
small tarts.
MUSHROOM QUICHE
2 cups sliced mushrooms (about
1/2 pound)
2 tablespoons butter
1 cup (4 ounces) grated cheddar
cheese
1 tablespoon flour
1/2 teaspoon dry mustard
baked 9-inch pie shell
3 eggs, beaten
3/4 cup light cream
2 tablespoons chopped parsley
IA teaspoon salt
dash pepper
2 slices process cheese
4 strips fried crumbled bacon
Saute mushrooms in butter
until lightly browned. Mix
grated cheese, flour and
mustard. Sprinkle mixture in pie
shell. Add mushrooms, Combine
eggs, cream, parsley and
seasonings. Pour over
mushrooms. Cut process cheese
in strips and arrange in
criss-cross design on top. Bake at
350 deg. ,F until custard sets (30
to 3*5 min'utes) SPrinkle with
bacon. before serving. 6. servings.

2 tbsp oil
I large clove garlic, peeled
2/3 cup boiling water
1 cup Ontario red wine or beef
bouillon
1/2 tsp salt
6 small boiling onions, peeled
2 cups diced carrots
1 can (10 oz.) mushroom pieces,
drained (optional)
3 medium potatoes, peeled and
quartered
6 whole black peppers
6 whole cloves
2 bay leaves
Fry bacon until browned but
not crisp; drain; cut into 1-inch
pieces. Cut beef into 1-inch
k pieces; dredge in flour; brown in
oil with garlic. Remove garlic;
add water, wine or bouillon, and
salt; bring to boil.
Turn mixture into 2-quart
casserole; add remaining
ingredients and bacon. Cover
and bake at 325 degrees for
about 2 hours. Serves 6.
