The home economists of the Canada Department of Agriculture suggest that you open a can of golden peaches and bring the sunshine right to your kitchen counter, Peaches canned in Canada are practically all of the freestone variety. This means that the flesh separates readily from the stone. These canned peaches make a particularly flavorful product. They are available as "halved" or "sliced" and in different size cans, the most popular being the 19-and 28-ounce sizes. The syrup is 45% sugar, the equivalent of a syrup made of 1 cup sugar to 1 cup water. There are three grades of canned peaches, the difference being related to shape, color and maturity only, not to food value. Most of the canned peaches are graded Canada Choice. They must be of good texture and flavor but the size may vary within the can.
