TOMATO TART

Wonder what • to have for
dessert? The home economists
of the Canada Department of
Agriculture suggest that you
open a can of golden peaches
and bring the sunshine right to
your kitchen counter,
Peaches canned in Canada are
practically all of the freestone
variety. This means that the
flesh separates readily from the
stone. These canned peaches
make a particularly flavorful
product.
They are available as
"halved" or "sliced" and in
different size cans, the most
popular being the 19-and
28-ounce sizes. The syrup is 45%
sugar, the equivalent of a syrup
made of 1 cup sugar to 1 cup
water. There are three grades of
canned peaches, the difference
being related to shape, color and
maturity only, not to food
value. Most of the canned
peaches are graded Canada
Choice. They must be of good
texture and flavor but the size
may vary within the can.
These are the peaches you
serve chilled "as is"' and right
from the can, or slice or dice to

to remain firm.
Pork: Supplies are increasing
with prices slightly lower.
Eggs: Plentiful' supplies at

Apples: Stocks well above
last year. Little change in prices.

1/4 cup melted butter
1 cup bread crumbs
3 medium tomatoes
6-8 small mushrooms
1 tablespoon melted butter
Shred 4 ounces of the
imported Holland cheese (to
make 1 cup). Thinly slice
remaining cheese. Thoroughly
blend the shredded cheese with
melted butter and bread crumbs.
Press onto the bottom and sides
of a well greased nine inch pie
make your own fruit cup, or use
for garnishing. Canada Fancy
and Canada Standard grades are
not generally available. However,
if displayed, Canada Standard is
indeed worth buying for use
when size, firmness and color are
of little consequence.
This "Quick Peach Pudding"
is a worthy oven companion to a
hearty casserole or baked
potatoes because it requires a
375dg. F oven. The basis of this
pudding is biscuit dough and the
diced peaches are added with the
milk. The peach syrup is
combined with brown sugar and
butter and poured over the
pudding at baking time.
For a dessert party the home
economists of the Canada
Department of Agriculture
suggest "Peach Cheese Cream"
which uses a 28-ounce can of
sliced peaches. This recipe uses
gelatin and cream cheese and is a
"make-ahead beauty" enhanced
with whipping cream.
QUICK PEACH PUDDING
1 19-ounce can peaches
1 cup all-purpose flour
2 teaspoons sugar
2 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons butter
1/2 cup milk
1 1/2 cups peach syrup (water.
added if needed)
1/2 cup brown sugar
2 tablespoons butter
Drain peaches, reserving
syrup. Dice peaches. Mix flour, 2
teaspoons sugar, baking powder.
pan. Cover with the thin slices of
imported Holland cheese. Top
with layer of tomato slices and
'the mushroom caps. Brush with
melted butter. Bake 20 minutes
in a preheated 350 degree. F.
oven. Makes 6 servings.
Crumb crust may be made
well in advance of the final
preparation, making this a very
quickly prepared luncheon,
supper or anytime dish.

butter until mixture resembles
coarse bread crumbs. Add
peaches and milk. Mix until just
combined, Turn into a greased
6-cup baking dish.
Bring syrup to a boil; stir
in brown sugar and remaining 2
tablespoons butter. Pour over
pudding. Bake at 375dg. F until
golden brown (about 40
minutes). 6 servings.
PEACH CHEESE CREAM
1 28-ounce can sliced peaches
2 envelopes gelatin
1/2 cup peach syrup
1 cup milk
2 8-ounce packages cream
cheese, softened
2 cups whipping cream
3/4 cup sugar
1 teaspoon lemon juice
Orange food coloring (optional)
Drain peaches, reserving
syrup. Soak gelatin in 1/2 cup of
the peach syrup, 5 minutes.
Scald milk, add gelatin and stir
until dissolved. Cool. Set aside a
few peach slices for decorating.
Press remainder through sieve, or
puree in blender. Gradually beat
whipping cream into cheese until
mixture is smooth. Stir in peach
puree, sugar and lemon juice.
Beat in cooled gelatin mixture,
and if desired tint with one or
two drops food coloring. Pour
into an 8-cup mold and chill
until firm (about 3 hours).
Unmold and decorate with
peach slices. 10 to 12 servings.
